- 3 cups sliced zucchini
- 2 1/2 cups sliced mushrooms
- 1 medium red bell pepper, cut into strips
- 2 tablespoons olive or vegetable oil
- 1 cup (4 ounces) Shredded Parmesan Cheese
- Cook and stir zucchini, mushrooms and pepper in oil over medium-high heat 5 to 6 minutes or until vegetables are crisp-tender.
- Remove from heat.
- Sprinkle with Parmesan cheese then cover.
- Let stand 2 minutes before serving.
- Enjoy Your Skillet zucchini with boiled rice.
