    2 (32 ounce) jars dill pickles

  • 4 cups white sugar, divided
  • 1/2 cup distilled white vinegar
  • 1/2 cup water
  • 1 tablespoon pickling spice

How to make Sweet Dill Pickles

  • Drain pickles and slice into 1/4 inch pieces. Place in a medium bowl with 2 cups sugar. Stir, cover and allow to stand at room temperature 6 to 8 hours, or overnight.
  • In a medium saucepan, mix together the remaining sugar, vinegar, water and pickling spice. Bring to a boil. Pour over the pickles. Allow the mixture to stand at room temperature 6 to 8 hours, or overnight.
  • Transfer the pickles to sterile jars and store in the refrigerator. Serve chilled.
  • Sweet Dill Pickles is ready to serve.

    12 eggs

  • 1 large onion, sliced into rings
  • 2 cups white wine vinegar
  • 2 cups water
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 1 tablespoon pickling spice, wrapped in cheesecloth

How to make Sweet Pickled Eggs

  • Cover eggs with water in a large pot. Cover with lid. Bring to a boil over medium-high heat. Boil gently for 10 minutes. Drain. Run cold water over eggs until they are cold. Shell eggs.
  • Prepare the brine in a sauce pan by combining the vinegar, water, sugar and salt. Stir over medium heat until sugar is dissolved.
  • Layer the eggs (whole) and onion rings in a sterilized 2 quart jar to within 1 inch of the top.
  • Add pickling spice to brine. Swirl bag around for 30 seconds. Remove bag. Pour brine over eggs to fill jar with 1/4 inch from top. Seal with a sterilized lid. Store in the refrigerator for 1 to 2 weeks before serving. Serve chilled.
  • Sweet Pickled Eggs is ready to serve.

  • 1 Kg Tinda
  • 150 Gm Jaggery
  • 1½ Cups Mustard Oil
  • 1 Cup Vinegar
  • 3 Tsp Red Chili Pepper
  • 2 Tsp Black Pepper
  • 8 Tsp Mustard Powder
  • 3 Tsp Spice Powder
  • Small Lump Of Tamarind
  • 2 Tsp Ginger
  • 2 Onions
  • Salt for Taste

How to make Sweet Tinda Pickle:

  • Wash, peel the outer skin of tinda and cut into small pieces.
  • Soak the tamarind in vinegar.
  • Grind garlic and onion.
  • Season mustard seeds in heated oil.
  • Add garlic and onion paste and fry until light brown.
  • Add ginger, red chili pepper and tinda pieces and fry.
  • Add spice powder, salt, black pepper powder, crushed jaggery and tamarind with vinegar and cook for a few minutes.
  • Place the pickle in an airtight jar and use it after 5 days.

  • 340gms smooth-skinned Lemons
  • 2tbsp salt
  • 1/2tsp Fennel seeds (crushed)
  • 1/2tsp Cumin seeds (crushed)
  • 1/2tsp cracked black pepper
  • 1cup shredded jaggery (gur)
  • 1/3cup fresh Lemon juice

How To Make Nimbu Mitha Achar:

  • Wash and thoroughly dry the lemons.
  • Set them in sun or air dry in oven for 5 minutes.
  • Slice each one lengthwise into 8 pieces.
  • Combine the salt, fennel seeds, cumin seeds and black pepper in a small bowl and mix well.
  • Arrange a layer of citrus, cut side up, in a jar. Sprinkle with the salt spice mixture.
  • Alternate the two ingredients until the jar is full.
  • Combine the jaggery with the citrus juice in a small saucepan.
  • Bring to boil over high heat, stirring constantly, then reduce the heat to low and simmer for 2-3 minutes.
  • Cool to Luke warm then pour over the citrus in the jar.
  • Cool to room temperature and cover with a cloth.
  • Set in the sun every day for 5 weeks; bring the jar inside every night.
  • Shake the jar 2-3 times in a day.
  • After 5 weeks do not set it in the sun, but continue to shake for another 2 weeks before use.

  • 4-5 apples, cored and sliced
  • 2 1/2 cups sugar
  • 1 1/2 cups vinegar
  • 1 tbsp fresh ginger, minced
  • 1 tsp garam masala
  • 3/4 tsp salt
  • 1 tsp dried ginger powder
  • 2 onions, sliced
  • 8-10 green chilies

How to make Sweet Apple Pickle:

  • In a large non-aluminum pan, combine vinegar, sugar, salt, garam masala, ginger powder and fresh ginger.
  • Bring to a boil.
  • Reduce heat to medium-low and cook, stirring occasionally, until sugar is completely dissolved.
  • Add onion and apple slices and cook.
  • Add green chilies and cook, stirring occasionally, until mixture becomes thick.
  • Cool and store in an airtight container.

  • 1/2 kg Lemons
  • 1 kg Sugar
  • 2 tsp Red chili pepper
  • 1 Inch cinnamon
  • 4 Cloves
  • 1-1/2 Cups water
  • 3 tbsp Salt

How to make Sweet Lemon Pickle:

  • Peel the lemons, slice and remove seeds.
  • Sprinkle salt over the lemon pieces.
  • Make half-thread consistency sugar syrup.
  • Add lemon pieces, red chili pepper, cinnamon and cloves to it and cook until it boils.
  • Place it in a jar and set it aside for one week before using.
