Sharbat e Rooh Afza Recipe

  • 1 cup cashews, pistachios and almonds, finely crushed
  • 1 tsp cardamom seeds
  • 1 gallon whole milk
  • 8 cups superfine sugar, to taste
  • 2 tsp vanilla extract
  • 1 1/2 cup Rooh Afza, to taste

How to make Sharbat e Rooh Afza:

  • In a mortar and pestle, grind the cardamom seeds. Crush all the nits and gather about 1 tsp.
  • Dissolve the Rooh Afza syrup and superfine sugar in the milk. Taste. If you like your drink a little more sweet, add more Rooh Afza and superfine sugar.
  • Mix the nuts, cardamom powder, vanilla extract in the sweet milk.
  • Refrigerate overnight.
  • Sip it slowly… and enjoy!

Gulab Ka Sharbat Recipe

  • 2 cups rose petals (washed well and patted dry on a paper towel)
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • Juice of 2 lemons (strained)
  • 1 cup pomergranate juice (optional)

How to make Gulab Ka Sharbat:

  • Coarsely crush the rose petals in a mortar and pestle and then put into a deep glass bowl. Pour 1 cup of boiling water over the paste and add the cardamom powder. Mix well, cover and allow to steep overnight.
  • In the morning, strain through a very fine sieve.
  • Add the sugar and stir till dissolved – do not heat.
  • When the sugar is dissolved, add in the lemon and pomergranate juices and mix well. The syrup is ready now and can be stored in the fridge for 3-4 days.
  • To serve, pour some syrup into a tall glass, mix with chilled water to taste and add crushed ice.

  • 1 kilogram of Raw Mangoes (Kairi)
  • 2 cups of Mango Pulp
  • 2 cups of Jaggery (Gur) (grated)
  • 2 cups Sugar
  • Seeds from 4 Cardamoms Pods (Ilaichi Daana) (crushed)
  • 2 tsp. Salt
  • 2 liters of Boiled Water

How to make Raw Mango Sharbat:

  • Wash and boil the mangoes in water until soft. Cool, peel and remove the seeds.
  • Add sugar and the grated jaggery and liquidize in a liquidizer.
  • Mix the cardamoms with the mango pulp. Add the warm water and refrigerate.
  • When serving, add a little cold water. Mix thoroughly and serve with salt to taste.

  • 1/2 kg almond (badam)
  • 2 kg sugar
  • 1 kg water
  • 1 tsp saffron (kesar)
  • 1 tsp green cardamom powder (hari elaichi)
  • 1/2 tsp potassium meta bi sulphate

How to make badam ka sharbat:

  • Soak badam in water for 8-10 hours.
  • Peel the outer covering.
  • Boil sugar, water, kesar and elaichi powder in it.
  • Boil it to one sugar syrup strand.
  • Let it cool, then add some syrup to badam and grind it to a fine paste.
  • Add syrup and potassium meta bi sulphate to the above.
  • Fill it in a bottle.

  • 1/2 x 3-inch piece of Orange Zest
  • 1/4 tsp Cardamom Seeds (Elaichi)
  • 4 whole Cloves (Lavang)
  • 6 cup Grape Juice (Angoor Ka Raas)
  • 1/4th cup Honey (Shahad)
  • 3-inch piece of Cinnamon (Tuj/Dalchini) Stick
  • 2 cup sparkling Water

How to make angoor sharbat:

  • Tie the zest, cardamom seeds and cloves in a small piece of cheese cloth.
  • Place the juice and honey in a large stainless steel pan and bring it to near the boiling point over moderate heat.
  • Remove the pan from the heat, add the spice bag and cinnamon stick, cover, and set aside until the juice has cooled to tepid.
  • Remove the spice bag and cinnamon stick and chill.
  • Add the water before serving.
