Beef Chili with Red Sauce – Rida Aftab Recipe

    Beef chili with red sauce

    Beef undercut ½ kg

  • Tomato ketchup 1 cup
  • Chicken stock 1 cup
  • Capsicum 2
  • Green chili 10
  • Corn flour 1 tsp
  • Chopped garlic 1 tbsp
  • Sesame oil 1 tbsp
  • Vinegar 1 tbsp
  • Black pepper ½ tsp
  • Salt ½ tsp
  • Soya sauce 2 tbsp
  • Oil 2 tbsp

How to make Beef Chili with Red Sauce

  • Cut the beef into strips and marinate it with ½ tsp salt and 1 tbsp of sesame oil, leave it for a night.
  • Now heat 2 tbsp of oil and fry 1 tbsp of chopped garlic in it. when the fragrance start coming add the chicken and fry for 3 to 4 minutes. Now add 1 cup chicken stock, cook it on low flame.
  • When the boil start coming add ½ tsp of black pepper and corn flour. in the end ad 1 cup tomato ketchup, 1 tbsp vinegar, 2 tbsp soya sauce, 10 green chili and 2 capsicum, close the flame.
  • Tasty beef chili with red sauce is ready to serve.

Chicken Satay – Rida Aftab Recipe

Ingredients

  • Chicken Satay Rida Aftab Recipe

    Chicken Satay

    ½ kg chicken fillet

  • 1 onion
  • 4 cloves of garlic
  • 1 tsp cumin seeds
  • 1 tsp red chili
  • 1 tsp turmeric powder
  • 1 tsp lemon grass
  • 1 tsp red chili powder
  • 1 tbsp Worcestershire sauce
  • ½ tsp salt
  • 2 tbsp lemon juice
  • 4 tbsp oil
  • 6 shashlik sticks

How to make Chicken Satay

  • In a grinder, add 1 tsp lemon grass, 1 onion, 4 cloves of garlic, 2 tbsp lemon juice, ½ tsp salt and 1 tsp cumin seeds.
  • Grind together until all spices are crushed together.
  • Slice ½ kg chicken fillet lengthwise and apply grinded spices, 1 tsp turmeric powder, 1 tsp red chili powder and 1 tbsp Worcestershire sauce and keep aside for 2 hours.
  • Insert a few chicken pieces into each shashlik stick.
  • In a frying pan, heat 4 tbsp oil and shallow fry both sides for 10 minutes on medium flame.
  • Chicken Satay is ready to serve.

    200 grams butter

  • 200 grams sugar
  • 200 grams plain flour
  • 3 eggs
  • 6 to 8 cup cases
  • 1 tsp baking powder
  • ½ tsp vanilla essence

How to make Extra Easy Cup Cakes

  • Beat together 200 grams butter and 200 grams sugar.
  • Then add ½ tsp vanilla essence, 200 grams plain flour, 3 eggs and 1 tsp baking powder and fold.
  • Pour the prepared mixture in 6 to 8 cup cases and bake in a pre-heated oven at 180 c for 20 minutes.
  • Extra Easy Cup Cakes are ready to enjoy.

Chicken and Spinach Kofta – Rida Aftab Recipe

Ingredients

  • ½ kg boneless chicken
  • 1 egg
  • 1 cup fried onion
  • 1 tsp ginger garlic paste
  • ½ tsp hot spices powder
  • ½ tsp salt
  • Ingredients for gravy
  • 250 grams yogurt
  • 1 kg boiled spinach
  • 1 cup crushed onion
  • 1 cup oil
  • 10 green chilies
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 2 tsp red chili powder
  • ½ tsp turmeric powder
  • ½ tsp salt
  • 4 tbsp fenugreek

How to make Chicken and Spinach Kofta

  • Finely crush ½ kg boneless chicken and 1 cup fried onion in a chopper.
  • Add ½ tsp salt, ½ tsp ginger garlic paste, ½ tsp hot spices powder and a beaten egg to the chopped mixture. Mix together and form koftas.
  • For Gravy, add a cup of oil in a pan and fry a chopped onion.
  • Then add ½ tsp ginger garlic paste, 2 tsp red chili powder, ½ tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin seeds, ½ tsp salt, 4 tbsp fenugreek and 250 grams yogurt and stir well.
  • When oil forms a separate layer, add koftas and cook for 10 minutes. Now add 1 kg boiled spinach and cook on low flame for another half an hour.
  • Then add 10 chopped green chilies and cover the pan with its lid. Let it cook on low flame for 10 minutes.
  • Delicious Chicken and Spinach Kofta is ready to serve.

    Honey Chili Pasta

    ½ kg chicken mince

  • 1 cup boiled lal lobia
  • 1 packet pasta
  • ½ bunch parsley
  • ½ cup oil
  • ½ cup chili garlic sauce
  • 1 tbsp crushed garlic
  • ½ tsp oregano
  • ½ tsp black pepper
  • ½ sp salt
  • 2 tbsp Thai chili paste
  • 2 tbsp soya sauce
  • 2 tbsp vinegar
  • 4 tbsp honey

How to make Honey Chili Pasta

  • In a cooking pot, heat ½ cup oil and sauté 1 tbsp crushed garlic in it.
  • When it is fragrant, add ½ kg chicken mince and stir on high flame.
  • Then decrease the flame and add 1 cup boiled lal lobia.
  • Also add 2 tbsp Thai chili paste, ½ tsp black pepper, ½ cup chili garlic sauce, 2 tbsp soya sauce, 4 tbsp honey, ½ tsp salt, 2 tbsp vinegar and a packet of pasta. Allow simmering for 5 minutes and turn off the flame.
  • Sprinkle ½ bunch chopped parsley.
  • Honey Chili Pasta is ready to serve delicious with Honey Chili Pasta.

Masala Bengan – Rida Aftab Recipe

  • ½ kg brinjals

    Masala Bengan

  • ½ kg tomatoes
  • 6 curry leaves
  • 6 green chilies
  • ½ bunch coriander
  • ½ cup tamarind
  • ½ cup oil
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tbsp grated coconut
  • 2 tsp red chili flakes
  • 2 tsp cumin seeds
  • ½ tsp salt

How to make Masala Bengan

  • Cut ½ kg brinjals into round slices and soak in salty water for some time. Then take out of the water and place on absorbent sheet. Now fry them in pre heated ½ cup oil and keep aside. Then add 2 tsp cumin seeds, 1 tsp mustard seeds and 6 curry leaves and keep aside. When spice is fragrant, add ½ kg tomatoes, 2 tsp red chili flakes, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tbsp grated coconut, ½ cup tamarind paste and ½ tsp salt and stir together. Then add fried brinjals, 6 green chilies and ½ bunch coriander and turn off the flame.
  • Delicious Masla Bengan is ready.

Multi Stuffed Capsicum – Rida Aftab Recipe

    Multi Stuffed Capsicum

    250 grams mince meat

  • 2 boiled potatoes
  • 4 capsicums
  • 1 cup mozzarella cheese
  • 1 cup corns
  • 1 cup boiled peas
  • ½ cup tomato ketchup
  • 1 tsp red chili flakes
  • 1 tsp garlic paste
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp chopped parsley

How to make Multi Stuffed Capsicum

  • Add 250 grams mince meat with ½ cup water, 1 tsp red chili flakes, 1 tsp garlic paste and ½ tsp salt to a cooking pot and allow cooking on medium flame.
  • When mince meat is well cooked, increase the flame to evaporate excess water.
  • Mix 2 boiled potatoes with salt n black pepper.
  • Also chop away that ¼ top part of capsicums and take out its inner part.
  • Fill in capsicums with potato mixture, mince mix, tomato ketchup, boiled peas, potato and mince meat again, sweet corns and mozzarella cheese.
  • Bake in a pre heated oven at 180 c for half an hour.
  • Sprinkle parsley and Multi Stuffed Capsicum is ready to serve.

    Lal Chutni

    12 large red chilies

  • 1 bulb of garlic
  • 1 cup tamarind thick paste
  • ½ cup tomato ketchup
  • 1 tbsp jaggery
  • ½ tsp salt
  • 2 tsp slightly cooked cumin seeds

How to make Lal Chutni

  • Soak 12 red chilies overnight. In a blender, add soaked chilies, 1 bulb of garlic, ½ cup tomato ketchup, 1 cup tamarind juice, 1 tbsp jiggery, ½ tsp salt and 2 tsp slightly cooked cumin seeds and blend well.
  • Tempting Lal chutni is ready.

    Hara Chicken Chana Pulao

    ½ kg rice

  • ½ kg chicken
  • 250 grams spring onions
  • 250 grams capsicum
  • 250 grams lobia ki phali
  • 1 bunch of coriander
  • 1 bunch of mint leaves
  • 50 grams green chilies
  • 1/5 cup oil
  • 50 grams butter
  • 100 grams plums
  • 300 grams boiled grams
  • 1 tbsp turmeric powder
  • 1 tbsp ginger garlic paste
  • 1 tbsp kewra
  • 1 tbsp whole hot spices
  • 1 tbsp crushed black pepper
  • 2 tsp cumin seeds
  • 2 tsp salt

How to make Hara Chicken Chana Pulao

  • In a pan, heat ½ cup and sauté 1 tbsp whole hot spices in it.
  • When spice is fragrant, add 1 tbsp ginger garlic paste, 100 grams plums, ½ kg chicken, 1 tbsp crushed black pepper, 1 tbsp turmeric powder, 2 tsp cumin seeds and 2 tsp salt.
  • Stir together and then add a glass of water and allow to cook.
  • Then add 300 grams boiled grams, ½ kg rice and a glass of water and allow to cook on medium flame. In another cooking pot, heat 50 grams clarified butter and sauté 250 grams spring onions, 250 grams capsicum and 250 grams lobia ki phalli in it.
  • Also add 1 bunch of coriander, 1 bunch of mint leaves and 50 grams green chilies.
  • Top rice with vegetables and 1 tbsp rose essence and allow simmering for 15 minutes.
  • Delicious Hara Chicken Chana Pulao is ready to serve.

Masala Wings Gravy – Rida Aftab Recipe

Ingredients

  • ½ kg chicken wings
  • 2 onions
  • 250 grams yogurt
  • 2 cardamoms
  • 1 tsp cumin seeds
  • 1 tsp hot spices powder
  • ½ tsp mace
  • 2 tsp red chili powder¬¬
  • 1 tsp coriander powder
  • ½ tsp salt
  • 2 tsp ginger garlic paste
  • ½ tsp turmeric powder
  • 4 green chilies
  • Coriander as required
  • ½ cup oil

How to make Masala Wings Gravy

  • Heat ½ cup oil in a pan and fry 2 chopped onions in it. Crush onion with your hands and mix with yogurt. Add ½ kg chicken wings to the same oil and also add 2 tsp ginger garlic paste, 2 cardamoms, 1 tsp cumin seeds, 1 tsp hot spices powder, ½ tsp mace, 2 tsp red chili powder, 1 tsp coriander powder, ½ tsp salt and /2 tsp turmeric powder. Stir together for 2 minutes. Then add yogurt and cover the pan to allow cooking on medium flame for 20 minutes. When wings are properly cooked, stir for some more time. Now add a cup of water, 4 green chilies and coriander as required and allow simmering on low flame.
  • Delicious Masala Wings Gravy is ready to serve.
