Up Side down Pineapple Pudding – Rida Aftab Recipe

    Up Side down Pineapple Pudding

    6 eggs

  • 1 packet cream
  • 1 cup caster sugar
  • 1 cup pineapple juice
  • 1 cup milk
  • 6 pineapple slices
  • 6 cherries
  • ½ cup sugar
  • 1 tsp vanilla essence

How to make Up Side down Pineapple Pudding

  • In a blender, add 6 beaten eggs, 1 tsp vanilla essence, 1 packet cream, 1 cup pineapple juice, 1 cup caster sugar and 1 cup milk and blend.
  • Make caramel of ½ cup sugar and spread on a cake mould. Place 6 pineapple slices on it and allow to cool.
  • Then pour blended mixture on top and bake in a pre heated oven at 150 c.
  • Take out of the oven and place on a dish upside down. Garnish with cherries.
  • Up Side down Pineapple Pudding is ready to serve.

    Spicy Ceaser Salad

    250 grams boiled boneless chicken

  • 1 spring onion
  • 1 tomato
  • 2 boiled eggs
  • 1 cup yogurt
  • 2 cups boiled white chickpeas
  • 1 tsp chili sauce
  • 1 tsp mustard paste
  • 1 tbsp lemon juice
  • 1 tbsp coriander
  • 1 tbsp oil
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp cream

How to make Spicy Ceaser Salad

  • In a bowl, add 250 grams boiled boneless chicken, 1 tbsp lemon juice, 1 cup yogurt, 2 tbsp cream, 1 tsp chili sauce, 1 tsp mustard paste, ½ tsp black pepper, ½ tsp salt and 1 tbsp oil.
  • Mix together and take out in a serving bowl.
  • Place 2 cups boiled white chickpeas, 1 chopped tomato, 1 chopped spring onion and 2 boiled eggs on top.
  • Spicy Ceaser Salad is ready.

    Chicken Butter Masala

    ½ kg boneless chicken

  • 250 grams yogurt
  • 1 cup crushed onion
  • 4 green chilies
  • 100 grams butter
  • 1 tsp green chili paste
  • 1 tsp red chili paste
  • 1 tsp coriander powder
  • 2 tsp ginger garlic paste
  • ½ tsp salt
  • ½ tsp turmeric powder
  • ½ tsp hot spices powder
  • 2 tbsp oil
  • 2 tbsp fresh coriander

How to make Chicken Butter Masala

  • Cook 1 cup crushed onion until its water is dry.
  • Then heat 100 grams butter and 2 tbsp oil in the same pan. Now add 250 grams yogurt, 1 tsp green chili paste, 1 tsp red chili paste, 1 tsp coriander powder, 2 tsp ginger garlic paste, ½ tsp salt, ½ tsp turmeric powder and ½ tsp hot spices powder and stir together.
  • The add ½ kg boneless chicken and 4 green chilies and allow simmering for 10 minutes.
  • Sprinkle 2 tbsp fresh coriander and serve delicious Chicken Butter Masala.

    Spicy Chicken Shawarma

    1 chicken breast

  • ½ cup yogurt
  • 1 tsp garlic
  • 1 tsp paprika powder
  • 1 tsp ground cumin
  • 1 tsp ground nutmeg
  • ½ tsp black pepper powder
  • ½ tsp salt
  • 2 tbsp chopped parsley
  • 2 tbsp chili sauce
  • 2 tbsp olive oil
  • 4 tbsp lemon juice
  • ¼ tsp cardamom powder
  • Ingredients for pita bread
  • 1 cup plain flour
  • ½ cup rice flour
  • 1 tsp sugar
  • 1 tbsp oil
  • ½ tsp salt
  • 2 tbsp yeast
  • Warm water as required

Ingredients for Tahini sauce

  • 1 tbsp garlic paste
  • ¼ tsp salt
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 4 tbsp sesame paste
  • Ingredients for pickled vegetables
  • 2 cups vinegar
  • 1 beetroot
  • 1 cucumber
  • 1 onion
  • 2 green chilies
  • ½ tsp salt

How to make Spicy Chicken Shawarma

  • Marinate chicken stripes with 1 tsp garlic, 4 tbsp lemon juice, ½ cup yogurt, 1 tsp paprika powder, ¼ tsp cardamom powder, ½ tsp salt, 1 tsp ground cumin, ½ tsp nutmeg powder and ½ tsp black pepper powder for an hour.
  • Then place in oven proof dish and bake in a preheated oven at 150 c for 20 minutes.
  • Take out of the oven and mix with chopped parsley, 2 tbsp chili sauce and 2 tbsp olive oil.
  • Method for Pita bread
  • Mix 1 cup plain flour, ½ cup rice flour, ½ tsp salt, 2 tbsp yeast, 1 tsp sugar and 1 tbsp oil and knead into fine dough. Put aside for an hour.
  • Roll portion of dough to make small rotis and bake in an oven proof dish at 150 c for 10 minutes.
  • Method for Tahini Sauce
  • In a bowl, add 4 tbsp sesame seeds, ¼ tsp salt, 2 tbsp lemon juice, 2 tbsp olive oil and 1 tbsp garlic paste and mix. Tahini Sauce is ready.
  • Method for pickled vegetables
  • In 2 cups vinegar, add a chopped cucumber, 2 green chilies, 1 beetroot, 1 onion and ½ tsp salt. Keep it preserved for 2 to 3 days. Mix with chicken as required.
  • Cut each pita bread into two halves and fill in chicken, pickled vegetables and tahini sauce.
  • Spicy Chicken Shwarma is ready to serve.

    Balochi Tikka Boti

    Mutton ½ kg

  • Yogurt 1 cup
  • Onion 1

  • Tomato 2
  • Chopped coriander 1 tsp
  • Raw papaya paste 1 tbsp
  • Salt ½ tsp
  • All spices powder ½ tsp
  • Ginger garlic paste 2 tsp
  • Lemon juice 2 tbsp
  • Oil 4 tbsp
  • Red chili powder 1-1/2 tsp

How to make Balochi Tikka Boti

  • On ½ kg mutton, apply ½ tsp salt, 1-1/2 tsp red chili powder, ½ tsp all spice powder, 1 tbsp raw papaya paste, 4 tbsp oil, 1 tsp chopped coriander, 2 tsp ginger garlic paste and 2 tbsp lemon juice. Leave it overnight in a refrigerator.
  • Dice 1 potato, 1 tomato and 1 onion. Add them to the marinated mutton 10 minutes before frying.
  • Onto each shashlik stick alternately thread a piece of mutton with the diced potato and onion. Roast the shashlik sticks on a frying pan or grill pan
  • Balochi tikka is ready to serve.

  • Nutmeg 1 piece

  • Stock 1 cup
  • Boiled rice 2 cups
  • Clarified butter ½ cup
  • Mint ½ cup
  • Mace 2 piece
  • Salt 1 tsp
  • Black cumin 1 tsp
  • Black pepper 1 tsp
  • Ginger garlic paste 1 tbsp
  • Kewra 1 tbsp
  • Badyaan flower powder ½ tsp
  • Yellow color ½ tsp

How to make Boneless Plain Biryani

  • Heat ½ cup clarified butter; add 1 tbsp ginger garlic paste, 1 tsp black cumin, 2 bay leaves, 1 piece nutmeg and 2 pieces of mace. Add ½ kg boneless chicken and fry well.
  • Then add 1 tsp salt in 1 cup stock. Add 6 finely chopped green chilies. Cover and simmer for 10 minutes.
  • Now spread 2 cups boiled rice, add ½ tsp badyaan flower powder, ½ bunch mint, 1 tbsp kewra, 1 pinch saffron and ½ tsp yellow color. Cover and simmer for 15 minutes then turn the stove off.
  • Boneless plain biryani is ready to serve.

    Ice Cream Fruit Custard

    Mango pulp 2 cup

  • Cream 1 packet
  • Milk 1 cup
  • Condensed milk 1 cup
  • Sugar ½ cup
  • Lukewarm water ½ cup
  • Gelatin powder 1 tsp
  • Ingredients for custard
  • Milk ½ liter
  • Mixed fruit 2 cup
  • Sugar ½ cup
  • Beaten cream 100gm
  • Cherry as required
  • Vanilla essence ½ tsp
  • Strawberry custard 2 tbsp

How to make Ice Cream Fruit Custard

  • Dissolve 1 tsp gelatin powder in ½ cup water.
  • In a blender, add 2 cup mango pulp, 1 cup milk, 1 packet cream, gelatin, ½ cup sugar and 1 cup condensed milk. Blend well and pour into an air tight box. Freeze.
  • To make custard, cook ½ liter milk. When it boils, add 2 tbsp strawberry custard and let it thicken.
  • Now add ½ tsp vanilla essence and frozen ice cream.
  • Garnish with 100gm beaten cream. Put 2 cups mixed fruits in the middle and cherries as required.
  • Ice cream fruit custard is ready to serve.

    Yogurt 250gm

  • Onion 1
  • Finely chopped tomato 1
  • Green chili 2
  • Crushed red chili 1 tsp
  • Garlic 1 tsp
  • Cumin 1 tsp
  • Magi enhancer ½ tsp
  • Salt ½ tsp
  • Coriander leaves 2 tbsp
  • Oil 3 tbsp

How to make Potato Raita

  • Heat 3 tbsp oil and fry 1 tsp garlic.
  • When aroma is given off, add 1 tsp crushed red chili, ½ tsp salt, 1 tsp cumin, 1 onion, 2 green chili, 2 finely chopped boiled potatoes, 1 finely chopped tomato and 2 tbsp coriander leaves. Fry for 1 minute and then turn the stove off.
  • Add 250gm yogurt after beating it well.
  • Potato raita is ready to serve.

How to make Sausage Frittata

  • In a bowl add and whisk 1 cup cream, 8 eggs, ½ tsp black pepper and ½ tsp salt.
  • In a frying pan add 2 tbsp butter, cook till butter melts, then spread the cream mixture on it. when the color of frittata change to brown then add 4 sausages, 2 spring onions, 6 basil leaves, 4 fresh red chili, 1 tsp of chopped red chili, ½ tsp salt and 1 tsp garlic.
  • In the end sprinkle 1 cup of chedder cheese and close the lid for 10 minutes, then bake in oven.
  • Tasty sausage frittata is ready to serve.

    Fried Rice

    Chicken boneless ½ kg

  • Boiled rice ½ kg
  • Spring onions ¼ kg
  • Egg 1
  • Carrot 1 cup
  • Capsicum 1 cup
  • Cauliflower 1 cup
  • Oil 4 tbsp
  • Chopped red chili 1 tsp
  • Finely sliced garlic 1 tbsp
  • Black pepper 2 tsp
  • Salt ½ tsp
  • Soya sauce 4 tbsp

Method:

  • In a pot heat 4 tbsp oil and add 1 tbsp finely sliced garlic.
  • Along with it add ½ kg chicken and close the lid for 10 minutes.
  • Now add 1tsp chopped red chili, ½ tsp salt, 2 tsp black pepper, 1 cup carrot, 1 cup capsicum, ¼ kg spring onions and 1 cup cauliflower, cook for 1 minute.
  • Now add ½ kg boiled rice. Take another pan and fry whisked egg in it, crush the egg and add into rice.
  • In the end add 4 tbsp of soya sauce, mix it well, and leave it to simmer for 10 minutes.
  • Tasty fried rice is ready to serve.
