    2 (2 pound) slabs baby back pork ribs

  • coarsely ground black pepper
  • 1 tablespoon ground red chile pepper
  • 2 1/4 tablespoons vegetable oil
  • 1/2 cup minced onion
  • 1 1/2 cups water
  • 1/2 cup tomato paste
  • 1/2 cup white vinegar
  • 1/2 cup brown sugar
  • 2 1/2 tablespoons honey
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1 1/4 teaspoons liquid smoke flavoring
  • 2 teaspoons whiskey
  • 2 teaspoons garlic powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon dark molasses
  • 1/2 tablespoon ground red chile pepper

How to make Scott Hibb’s Amazing Whisky Grilled Baby Back Ribs

  • Preheat oven to 300 degree F (150 degrees C).
  • Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chili pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours.
  • Meanwhile, heat oil in a medium saucepan over medium heat. Cook and stir the onions in oil for 5 minutes. Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chili pepper. Bring mixture to a boil, then reduce heat. Simmer for 1 1/4 hours, uncovered, or until sauce thickens. Remove from heat, and set sauce aside.
  • Preheat an outdoor grill for high heat.
  • Remove the ribs from the oven, and let stand 10 minutes. Remove the racks from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side. Brush sauce on the ribs while they’re grilling, just before you serve them (adding it too early will burn it).

    1/2 cup all-purpose flour for coating

  • 2 teaspoons salt
  • 1 pinch ground black pepper
  • 4 pounds beef short ribs
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 1 cup stewed tomatoes
  • 1 clove garlic, minced
  • 6 potatoes, peeled and cubed
  • 3 onions, chopped
  • 6 carrots, chopped
  • 1 1/2 tablespoons all-purpose flour
  • 4 tablespoons water

How to make Braised Beef Short Ribs

  • In a bowl, combine the 1/2 cup flour, salt and ground black pepper. Roll the ribs in the seasoned flour.
  • In a large pot, heat the oil and brown the ribs well on all sides. Pour in 1 cup boiling water, tomatoes, and garlic. Reduce heat to low, cover, and simmer for 1 1/2 hours, adding more water if necessary.
  • Place the potatoes, onions, and carrots in the pot. Continue to simmer for another 30 minutes to 1 hour, or until all vegetables are tender. Remove the meat and vegetables to a serving platter.
  • In a separate small bowl, dissolve 1 1/2 tablespoons flour and 2 tablespoons water for every one cup liquid remaining in the pot. Add this to the pot and stir well until thickened. Pour over meat and vegetables.

  • 2 pounds beef ribs
  • 1/4 cup peach preserves
  • 1/2 cup water
  • juice of 1 lemon
  • 1-1/2 Tbsp. brown sugar
  • 1 Tbsp. vinegar
  • 1/2 tsp. paprika
  • freshly ground black pepper
  • 2 Tbsp. Worcestershire sauce

How to make Barbecued Beef Ribs:

  • Preheat oven to 450°. Place the ribs on a rack in a shallow baking pan and roast in oven for 30 minutes. In a small saucepan, combine all other ingredients and cook over medium heat until thickened, stirring constantly. Set sauce aside.
  • Remove the ribs and rack from pan and pour off the fat. Reduce oven heat to 350°. Return ribs to the pan, and pour the sauce over them. Bake uncovered, basting occasionally, until rubs are tender, about 1 hour.
