  • 12 ounces dried lima beans
  • 4 pounds oxtails
  • 2 large Vidalia onions, chopped
  • 3 scallions, chopped
  • 4 garlic cloves, smashed
  • 1 bunch fresh thyme
  • 2 tablespoons red pepper flakes
  • 4 teaspoons hot paprika
  • 2 bay leaves
  • 2 tablespoons hot sauce
  • 4 tablespoons gravy master
  • 6 cups low-sodium beef broth
  • 4 teaspoons tomato paste
  • 2 tablespoons salt
  • Right rice, recipe follows

How to make Oxtail Stew

  • In a large bowl, cover lima beans with water, cover with a towel and soak overnight.
  • In a large pot, add oxtails, onions, scallions, garlic, thyme, red pepper, paprika, bay leaf, hot sauce, and gravy master and marinate at least 4 hours or overnight in the refrigerator, stirring occasionally.
  • Add enough water to just cover the oxtails and bring the mixture to a boil. Lower to a simmer, cover and cook 2 hours. Every 30 minutes for 2 hours add 2 cups of water or broth, alternating, as necessary, to keep oxtails covered with liquid.
  • At 2 hours, add the beans, tomato paste, and 2 more cups of beef broth and water, if needed. Bring to a boil then simmer uncovered 2 hours, skimming fat off top and stirring occasionally. In the last 1/2 hour of cook time, season with 2 tablespoons salt. Serve with rice.

    3-4 pounds oxtails, cooked

  • 1 onion, chopped
  • 3/4 stick (6 tablespoons) unsalted butter, softened
  • 1/3 cup fresh orange juice
  • 2 teaspoons drained bottled green peppercorns
  • 2 tablespoons oxtail bouillon or beef broth
  • 1/8 teaspoon ground cloves
  • 1 teaspoon salt
  • French or Italian crusty bread as an accompaniment

How to make Oxtail Pate

  • Carefully pick through and discard the fat and bones from the oxtails. Transfer the meat to a food processor.
  • In a skillet cook the onion in 2 tablespoons of the butter over medium heat, stirring occasionally, until golden, about 5 minutes. Add the onions to the meat with the remaining 4 tablespoons butter, orange juice, peppercorns, bouillon or broth, cloves, and salt. Pulse the motor until the pâté is minced but not puréed.
  • Pack the pâté into a crock. The pâté may be made 3 days in advance, keep covered and chilled. Serve the pâté at room temperature with bread.

Hawaiian Oxtail Soup Recipe

Hawaiian Oxtail Soup Ingredients

  • 4 pounds oxtails
  • 2 pounds beef or pork bones
  • 1 onions cut in 4
  • 6 cloves garlic crushed
  • 1 or 2 celery stalks 1/2 inch long
  • 4 cilantro roots
  • 4 star anise or 4 tablespoon five spice
  • salt and pepper to taste
  • 2 sliced of galagal fresh or dry
  • 2 lemongrass cut 1/2 inch long
  • 1/2 cup of cilantro leaves chopped for topping
  • 5 tbsp.or more thick soy sauce for darkess
  • 2 parley leaves discard steam
  • 4 tablespoon olive oil
  • 1/2 red onion thinly sliced
  • 3 glove of fried garlic in oil (optional)
  • 8 cups of cook jasmine rice
  • 8 sliced of lime (optional)
  • SIDE CONDIMENTS : (if desire)
  • sliced hot pepper in vinegar
  • sugar
  • hot dried red pepper blended
  • fish sauce

How to make Hawaiian Oxtail Soup

  • In a large pot, add 2 tablespoons of olive oil, add cilantro root, half amount of garlic, celery and onion.
  • When vegetables begin to take on color, add 2 pounds of beef or pork bones. Stir til brown
  • After the bone take on sufficiently roasted color. Add water to cover bone, galagal, lemongrass, star anise, thick soy sauce, salt and pepper.
  • Simmer on the lowest heat for 1 hour. Keep check it to make sure that is not too dry. If dry add more water.
  • When done, drained beef bone and all herbs from soup and bring back the broth and continue cooking.
  • In a medium size pan, add garlic, cook until golden brown, add oxtail, cook until brown. Place oxtails into the broth and bring to boil. When boil, cover and simmer in a low hear for 2-3 hours.
  • In a serving bowl, placed a scoop of Jasmine rice into bowl. Pour in oxtails and broth, top with cilantro, parsley, red onion, fried garlic and side of lime wedges if desire.
  • Hawaiian Oxtail Soup recipe is ready to serve.
