  • Combine the oatmeal and orange juice. Set aside. In a large mixing bowl, combine flour, baking powder, salt, soda and sugar. Make a well in the center of the dry ingredients and add oatmeal mixture, oil and eggs. Stir only until ingredients are moistened. Carefully fold in berries and orange peel. Spoon batter into greased muffin tins, filling about 3/4 full. Combine walnuts, sugar and cinnamon. Sprinkle over muffins and bake at 400 degrees F for 15 minutes or until muffins test done.   • Flour – 125 gms
  • Baking powder – 1 tsp

How to make Steamed Orange Pudding

  • Mix butter and sugar until smooth.
  • Gradually add slightly beaten eggs and whisk thoroughly.
  • Mix orange juice and grated lemon.
  • Separately sieve together flour, cocoa powder and baking powder.
  • Now add the flour to the above mixture.
  • Mix together and put in a greased and dusted mould.
  • Steam the pudding in a double boiler in a oven for 2 hours at 240F.

  • 2/3 cup white sugar
  • 1/4 cup butter

How to make Orange Cake

  • Grease a 10 inch Bundt pan. Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in 3/4 cup orange juice, oil, eggs and lemon extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 60 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • In a saucepan over medium heat, cook 1/3 cup orange juice, sugar and butter for two minutes. Drizzle over cake.

  • 3 tablespoons white wine vinegar
  • 2 teaspoons caster sugar
  • 2 tablespoons sunflower or groundnut oil
  • Salt and freshly ground black pepper

How to make Beetroot And Orange Salad

  • To make the dressing, lightly crush the celery seeds in a mortar using a pestle, or with the end of a rolling pin, and place them in a small saucepan.
  • Add the wine vinegar, sugar and 1/4 pint (150 ml) water. Boil for 8-10 minutes until the liquid has reduced to about 2 tablespoons. Strain into a bowl and put to one side to cool.
  • Using a sharp knife, peel the oranges, cutting away the pith and the skin. Slice the oranges into rings, catching any juice in a bowl to add to the dressing.
  • Peel and thinly slice the beetroot, cubing a small amount to place in the centre of the dish. Arrange the beetroot and orange slices alternately.
  • Mix the oil with the vinegar mixture, add salt and black pepper to taste and beat well with a fork. Pour the dressing over the salad and serve. For extra garnish, arrange thinly pared strips of orange peel over the salad.

  • 2 1/2 cups oatmeal rolled oats (Quaker Quick or Old Fashioned, do not

  • Preheat oven to 375. Line two baking sheets with parchment paper
  • Whisk together the flour, baking soda, and cinnamon.
  • Combine granulated sugar with grated orange zest, set aside.
  • Heat ten tablespoons butter in small saucepan, place remaining 6 tablespoons butter in large mixing bowl. When butter is nicely browned (this takes a few minutes) and has a nutty aroma, pour over the remaining butter and mix until all butter is completely melted.
  • Add the granulated sugar and orange, brown sugar, vanilla and salt to the butter and whisk until combined. Add the egg and egg yolk.
