  • 1/2 pound thick-sliced bacon, cut into 1/2 inch pieces

  • 1/2 teaspoon dried thyme leaves

How to make Macaroni and Cheese with Bacon and Onions

  • Follow the recipe for Creamy Macaroni and Cheese using Vermont white cheddar.
  • Fry bacon in a large skillet over medium-high heat until crisp, about 5 minutes. Transfer to a paper towel-lined plate. Pour off all but 3 tablespoons of bacon drippings. Add onions and thyme; saute until soft and golden brown, 8 to 10 minutes. Stir bacon and onions into macaroni. Serve hot.

  • 2¼ lbs/ 1 kg pickling onions, peeled (see note below)
  • 4 tsp pickling spices or
  • ½tsp coriander seeds, ½tsp mustard seed, ½tsp black peppercorns, ½tsp dried chili flakes
  • 1 oz / 27g salt
  • 35 fl oz/ 1 liter malt vinegar
  • 6 oz/ 170g sugar

How to make Pickled Onions:

  • Peeling pickling onions is fiddly and time consuming. To speed up the process top and tail the onions, then place the onions in a large heatproof bowl and pour over boiling water to cover. Leave to cool and hey presto, the skins will just rub away.
  • Sprinkle the salt over the peeled onions, stir and leave overnight. Next day rinse the onions and dry with kitchen towel.
  • Place the spices, vinegar and sugar into a large stainless steel pan. Heat to dissolve the sugar but do not boil.
  • Pack the onions into clean, sterilized jars. Pour over the vinegar and spice liquid to fill the jars, make sure each jar has pickling spices in and check there are no air pockets. Seal the jars and leave to cool.
  • The onions will be ready to eat after about one month or better if kept for two. Once opened store in a refrigerator.

  • 1/2 lb sliced mushrooms (I use crimini but white work as well)
  • 1 medium onion, sliced into wedges
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic salt

How to make Mushroom And Onions For Steak:

  • Melt the butter and olive oil together in a frying pan and add the mushrooms and onions; let them cook slowly, over medium heat, until the mushrooms are getting a little brown and the onions are nice and soft, about 20 minutes.
  • While there’s still some moisture left from the mushrooms, add the Worcestershire sauce and garlic salt.
  • The mixture will thicken and it’s ready to serve.
  • Serve with grilled steak and use leftovers for omelets.
  • Makes 4 servings if served with steak

  • 2 slices bacon
  • 1 pound frozen okra, thawed and sliced
  • 1 small onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 celery, chopped
  • 1 (14.5 ounce) can stewed tomatoes
  • salt and pepper to taste

How to make Okra With Tomatoes And Onions:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Remove bacon from pan and saute okra, onion, pepper and celery until tender. Add tomatoes, salt and pepper and cook until well blended.
  • Garnish with crumbled bacon, if desired.
