Mixed Vegetable Khichdi Recipe

Mixed Vegetable Khichdi Recipe Ingredients:

Mixed Vegetable Khichdi Recipe

  • fresh raw sweet corn kernel from 2 sweet corn
  • 1 small – orange bell pepper
  • 1 small – red bell pepper
  • 2 small – cucumber (small cucumbers are tasty)
  • 1 bunch – cilantro
  • 1 tbsp – fennel seeds
  • 1 tbsp – cumin seeds
  • white onion
  • 2 tsp – lime juice
  • 1 tsp – chat masala
  • salt to taste

How to make Mixed Vegetable Khichdi:

  • Mix brown basmati and whole red lentils in a large bowl and mix together.
  • Add water to it, swirl a couple of times and drain the water. Repeat once.
  • Place the rice and lentils in a large pan with the bay leaves and sufficient water to cook the rice and lentils and simmer on medium heat until the rice and lentils are cooked and not mushy. (Or place the rice, lentils and bay leaves with water in the rice cooker and cook until done. This is what I did and it turned out perfectly)
  • Remove the bay leaves and discard.Keep the cooked rice and lentils aside.
  • Heat ghee in a heavy bottomed pan and add cumin seeds to it.
  • When the seeds start crackling, add asafoetida, turmeric powder and quickly saute for a second.
  • Add cut onions and saute until the onions turn transparent.
  • Add vegetables and sprinkle a little water, a pinch of salt and cook until the vegetables are soft but not mushy.
  • Add the cooked rice and lentils to it, add chilli powder, salt to taste and mix well.
  • Let it heat on low all the way through for a few minutes.
  • Garnish with cilantro and serve hot with raita and papad.

Dal Rice Khichdi Recipe

Dal Rice Khichdi Ingredients:

Dal Rice Khichdi Recipe

  • 2 cups rice
  • 1 cup toor dhal
  • 5 cloves
  • 1 cinnamon
  • 5 cardamom
  • 2 finely sliced onion
  • 6 to 8 small size tomatoes
  • 4 slitted into halves green chillies
  • 12 to 15 mint leaves
  • 1/2 bundle corriander leaves
  • 1 tsp garlic paste
  • 1 1/2 tsp ginger paste
  • salt to taste
  • 1/4 cup veg. oil
  • a few curry leaves
  • 3 cups water
  • a pinch of turmeric powder

How to make rice khichdi:

  • Wash and cook dhal with a pinch of turmeric powder. Set aside.
  • Don’t discard the cooked dhal water.
  • Fry the onions, cloves, cinnamon and cardamom.
  • When onions are golden add slit green chillies, mint, curry leaves and a part of the corriander leaves.
  • Keep the remaining corriander leaves for garnishing.
  • Add salt, ginger and garlic paste. Fry for 2 minutes.
  • Add the washed, drained rice and chopped tomatoes. Fry for few minutes.
  • Add the cooked dhal, mix well and add 3 cups of water.
  • Add cooked dhal water. Cook it for 8 to 10 minutes till the rice is done.
  • Garnish with chopped corriander leaves and serve hot.

Moong Dal Khichdi Recipe

Moong Dal Khichdi Ingredients:

  • 2 tbsp oil
  • ½ cup yellow mung dal
  • 4 to 5 curry leaves
  • ½ tbsp turmeric powder
  • 2-3 dried red chillies
  • 1 tbsp garam masala
  • a pinch of asafoetida
  • 2 tbsp of ground cumin and desiccated coconut powder
  • Freshly grated coconut and coriander for garnishing

  • Sugar to taste
  • Salt to taste

How To Prepare Mung dal khichdi:

  • Take the dal and rice and clean them. Wash them properly and mix both of them. Soak them and drain. Keep for 15 minutes.
  • Now take a kadhai/wok and heat oil in it. Add asafoetida, curry leaves and dried red chilies. Cook for a minute.
  • Now add he dal mixture and turmeric. Stir and mix well. Add 3 cups of hot water to it and mix thoroughly.
  • Add ground cummin and desiccaed coconut powder, sugar, salt and garam masala and mix well.
  • Take a pressure cooker and cook it in it till done.
  • Mung Dal Khichdi is ready to be served. Garnish with freshly grated coconut and coriander before serving.

Khichdi Recipe

  • 200 gms Soaked rice
  • 50 gms Soaked moong Dal
  • 50 gms Soaked masur Dal
  • 4 Large onions
  • 4 Garlic flakes (minced)
  • 1 Ginger (minced)
  • 2 Potatoes
  • 2 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 2 tsp Garam masala
  • Green chillies
  • Oil for frying

How to make Khichdi:

  • Peel the potatoes and cut into pieces.
  • Chop the onions and green chillies.
  • Heat the oil and fry chopped onions till it turns brown.
  • Add minced garlic, ginger and green chillies.
  • Now mix garam masala and fry for 3 minutes.
  • Pour warm water and add moong dal.
  • Add masur dal and rice after 10 minutes.
  • Add potatoes and salt.
  • Cook over medium heat till it gets cooked.
  • Serve hot with curd and pickle.

Masaley Dar Khichri Recipe

Ingredients:

  • 4 cups rice, soaked for 1 hour
  • 1 kg Beef
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 4 medium onions,chopped
  • 4 medium tomatoes,Chopped
  • 5 green chillies,chopped
  • 1 tbsp red chilli powder
  • 1/4 tsp turmeric Powder
  • 1/2 tsp garam masala powder

Whole Garam Masala:

  • 3 cloves
  • 3 Bari Ilaichi
  • 2 Cinnamon Sticks
  • 7 black peppercorns
  • 2 bay leaves

Method:

  • Put beef in a cooking utensil and put 45 cups of water and let it boil and put 2 whole garlic clove and 1/2 ginger in it and let it cook till the beef has become tender.
  • Now remove the beef and drain the water in a bowl and shred the beef.
  • Now put oil and put chopped onions and let it fry till it has become light golden brown now add chopped tomatoes, green chillies, salt, red chilli powder, turmeric powder and whole garam masala and let it cook till the masala leaves oil.
  • Now add the beef and cook it for sometime and now add 1/2 cup water and let it simmer till the water has dried add rice with 4-1/2 cup water and let it cook and by moving the spoon occasionally so that it doesn’t stick at the bottom.
  • Let it cook till the rice has become very soft and the look will be more like a haleem.
  • Masaley dar Khichri is ready to serve.
  • Serve hot.
