  • 2 tsp Garlic paste
  • 2 tsp Ginger paste
  • 4 tsp Lemon juice
  • 2 Cups curd
  • 2 Cups cream
  • 4 tsp Gram flour
  • 2 tsp White pepper
  • 2 tsp Cumin seeds
  • 2 tsp Clove powder
  • Salt to taste

How to Prawn Kebab

  • Clean the prawns.
  • Shed them for 10 minutes.
  • Blend the curd and cream properly.
  • Add gram flour, white pepper and clove powder.
  • Mix it well with prawns.
  • Add salt and put the mixture in silver foil.
  • Keep the prawns in refrigerator for 2 hours.
  • Put prawns in an oven and tandoor it for 20 minutes.
  • Once the prawns turn golden brown, put butter over it.
  • Oven them for 2 minutes.
  • Prawn Kebab is ready to serve.

    • Garlic – 25 gm

    How to make Chicken Cheese Kebab

    • Make individual pastes of garlic, cardamom and cashew nuts.
      Add all ingredients to the chicken pieces and mix well.
      Leave covered (preferably in the refrigerator) for at least 1½ hours.
      Place the chicken pieces in a pre-heated grill, turning once until the ckicken is lightly brown.
      Serve hot with salad and your choice of chutney (preferably sweet mango chutney).

    • Cut beef into cubes approximately 1 inch square. Place in prepared marinade overnight or minimum 8 hours.       1 kg very tender beef cut into 1″ thick strips

    • 2 large onions sliced
    • 2 tbsps vegetable/ canola/ sunflower cooking oil
    • 1 cup yoghurt
    • 2 tbsps garlic paste
    • 1 tbsp ginger paste
    • 2 tsp cumin powder
    • 2 tsps coriander powder
    • 1 tsp freshly ground pepper
    • 1/2 tsp red chilli powder
    • 1/2 tsp star anise powder
    • 1/2 tsp mace powder
    • 2 tbsps raw papaya paste
    • Salt to taste

    How to make Bihari Kabab

    • Fry the onions in the oil till soft. Drain on paper towels and grind to a smooth paste.
    • Mix the onion paste, all the spices with the yoghurt and add the beef strips to this mix. Add salt to taste and set aside for 8-10 hours in the refrigerator.
    • Add the raw papaya paste to the yoghurt and beef mix about 1 hour before you are ready to cook the kabab.
    • Thread 8-10 beef strips onto each skewer and grill till cooked.

    • 1 large onion, cut into 1 inch chunks
    • 1 large red or yellow bell pepper, cut into 1 inch chunks
    • 1/2 cup dried bread crumbs
    • 1/4 cup milk
    • 1/3 cup Parmesan cheese, grated
    • 2 cloves garlic, minced
    • 2 tablespoons dried parsley
    • 1 tablespoon dried basil
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 eggs

    How to make Grilled Kebabs

    • Preheat grill for medium-high heat. Combine bread crumbs and milk in a small bowl. Let mixture sit for 5 minutes then squeeze out milk from bred crumbs. Combine beef, cheese, garlic, herbs, salt, pepper, and eggs in a large bowl. Add bread crumbs and blend well. Shape ground beef mixture into 16-18 meatballs, about 1 1/2 inches around. Skewer one meatball at a time alternating with pieces of onion and bell pepper. Place kebabs on a lightly oiled grill grate and allow to cook for 10 minutes, rotating every 2-3 minutes. Remove from heat and serve.

    • 2 cloves garlic (lasan) chopped
    • 750 gms skinless chicken thigh fillets, cut in half
    • 3 tsp ground turmeric
    • 1 onion (pyaj) finely grated
    • 1teaspoon red chilli (lal mirch) powder
    • 1teaspoon salt (namak)
    • 500 gms chopped tomatoes (tamatar)
    • 30 gms ghee
    • 3tsp ground cumin (jeera)
    • 3 tsp ground coriander
    • 2 tblsp grated fresh ginger (adrak)
    • 30 gms fresh coriander leaves roughly chopped
    • oil (tel) for cooking

    How to make Chicken jalfrezi kebab:

    • Heat up about 2 tblsp oil in a deep frying pot and fry the onion and garlic for 2 minutes over high flame heat.
    • Mix in the chicken, turmeric, chili powder and salt. Fry gently for 5-10 minutes or until golden
    • Turn the chicken frequently.
    • Mix in the tomatoes, cover and stir fry over medium heat up for 20 minutes. Uncover and simmer (boil slowly at low temperature) for 10 minutes to let all the excess liquid evaporate and the sauce thicken.
    • Mix in the ghee or oil, cumin, ground coriander, ginger and fresh coriander and simmer (boil slowly at low temperature) for 5-7 minutes or until the fat separates out from the thick sauce.
    • Serve the chicken pieces with the sauce.

    • 4 cloves garlic, minced
    • 1 teaspoon kosher salt
    • 1 pound ground lamb
    • 3 tablespoons grated onion
    • 3 tablespoons chopped fresh parsley
    • 1 tablespoon ground coriander
    • 1 teaspoon ground cumin
    • 1/2 tablespoon ground cinnamon
    • 1/2 teaspoon ground allspice
    • 1/4 teaspoon cayenne pepper
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon ground black pepper
    • 28 bamboo skewers, soaked in water for 30 minutes

    How to make Turkish kofte kebab:

    • Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef’s knife on your cutting board. Mix the garlic into the lamb along with the onion, parsley, coriander, cumin, cinnamon, allspice, cayenne pepper, ginger, and pepper in a mixing bowl until well blended. Form the mixture into 28 balls. Form each ball around the tip of a skewer, flattening into a 2 inch oval; repeat with the remaining skewers. Place the kebabs onto a baking sheet, cover, and refrigerate at least 30 minutes, or up to 12 hours.
    • Preheat an outdoor grill for medium heat, and lightly oil grate.
    • Cook the skewers on the preheated grill, turning occasionally, until the lamb has cooked to your desired degree of doneness, about 6 minutes for medium.

    • 1/2 cup soy sauce (I use the sodium reduced variety)
    • 1/3 cup oil
    • 1/4 cup lemon juice
    • 1/2 teaspoon garlic powder or 2 fresh garlic cloves, crushed

    How to make Chicken Shish Kebab:

    • Mix ingredients together; marinate chicken for a minute 1 hour.
    • Thread veggies on skewers alternating with chicken.
    • Grill till chicken is cooked or bake in oven at 350° for 45 minute on a pan with water below it.

    • 1 tblsp Raw Papaya Paste

    • 2 tblsp Cashewnut (Kaju)
    • 2 tsp thick Cream (Malai)
    • 2 Onion (Pyaj)
    • 2 tsp Carom Seeds / Thyme (Ajwain)
    • 2 tsp Dried Mango Powder (Amchoor)
    • 2 tblsp Rock Salt (Kala Namak)
    • 3 tblsp Cumin Seed (Jeera)
    • 1 tblsp Dry Ginger (Saunth)
    • 1 tsp Black Pepper (Kali Mirch)
    • 1/2 tsp Nutmeg Powder(Jaiphal)

    How to make seekh kabab:

    • Wash the keema and put in a strainer and gently press to squeezeout all the water.
    • Mix all the ingredients to the keema and knead well.
    • Keep aside for 1 hour.
    • Heat a gas oven or an electric oven with the skewers.
    • Take a big ball of the keema mixture and hold a hot skewer carefully in the other hand.
    • Press the mince on to a hot skewer.
    • The keema will immediately stick to the hot skewer.
    • Repeat with left over mince on all the other skewers.
    • Place the skewers in the oven.
    • Keep rotating the skewers occasionally.
    • When cooked, gently remove the kababs from the skewers with the help of a napkin.
    • Shallow fry the kababs on a nonstick pans in 1 tablespoon oil.
    • To serve sprinkle some chat masala and lemon juice on the kababs.
