  • 3 1/2 cups milk

How to make Hot Chocolate

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2
    minutes. Watch that it doesn’t scorch. Stir in 3 1/2 cups of milk and heat until very
    hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add
    the cream to the mugs of cocoa to cool it to drinking temperature.

    2 egg whites, lightly beaten

  • ½1/2 cup yellow cornmeal
  • 2 tsp. chili powder
  • ½1/2 tsp. ground cumin
  • ¼1/4 tsp. salt
  • ½1/2 tsp. Freshly ground black pepper
  • 8 chicken legs, skinned ( 4oz each )
  • ¼ cup lime or lemon juice
  • lime wedges and parsley sprigs for garnish.

How to make Hot and Spicy Drumsticks

  • Preheat oven to 400º. Spray a 13”x 9” baking dish with vegetable cooking spray. Set aside.
  • Place egg whites in a shallow bowl. On a sheet of waxed papper, combine cornmeal, chili powder, cumin,salt, and pepper. Mix well. Dip chicken legs, one at a time, in egg whites,then dredge in cornmeal mixture, turning to coat.
  • Arrange chicken in prepared dish for 20 minutes, turning once. Drizzle with the lime juice and bake until juices run clear when meat is pierced white a fork, about 10 minutes.
  • Place chicken on serving plates. Garnish with lime wedges and parsley sprigs.
  • Hot and Spicy Drumsticks is ready to serve.

  • Add hot milk mix
  • Pour into a greased floured tube or bundt pan.
  • Bake for 45 mins
  • Dust with powdered sugar when cool and serve.

    1/4 cup lentils

  • 1/4 cup wild rice
  • 1 cup fresh spinach
  • 1/2 cup sliced green bell pepper
  • 1 scallion, sliced

How to make Warm Lentil Salad

  • Separately, cook the lentils and wild rice according to the package directions.
  • Meanwhile, pour about 1/2 inch of water into a small saucepan and bring to a simmer over medium-high heat.
  • Fit a steamer basket in pan. Place the spinach in steamer, cover, and steam until wilted, 1 to 2 minutes.
  • Transfer to a plate.
  • Spoon the warm rice and lentils over the steamed spinach.
  • Top with the bell pepper, scallion, oil, and black pepper.

  • 4 (6 ounce) fillets cod
  • 2 cups butter flavored shortening, for frying

How to make Hot and Crispy Fish

  • In medium bowl, combine the potato flakes, flour, garlic powder, seasoning salt, black pepper, and cayenne pepper.
  • Soak fish filets in bowl of cold water.
  • In a deep skillet or deep fryer, melt and heat the shortening to 350 degrees F (175 degrees C).
  • Dredge fish filets in dry mixture and fry in the hot oil for 5 minutes or until fish flakes apart easily. Remove from oil and place on paper towels to absorb excess oil.

  • Cut chicken wings into three sections; discard wing tip sections. In a large resealable plastic bag, combine the bread crumbs, sesame seeds, paprika and salt. Place cream in a shallow bowl. Dip chicken wings in cream, then place in the bag and shake to coat evenly.

  • 2 tablespoons rice wine
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1 dash hot pepper sauce
  • 1 tablespoon grated fresh ginger
  • 1 clove crushed garlic
  • 1 pound skinless, boneless chicken breast halves, cut into bite size
    pieces
  • 2 tablespoons sesame seeds
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 ounces fresh mushrooms, quartered
  • 1 green bell pepper, sliced
  • 4 green onions, sliced diagonally into 1/2 inch pieces

How to make Hot Sesame Chicken

  • To Make Marinade: In a nonporous dish or bowl blend cornstarch with wine or sherry; then stir in lemon juice, soy sauce, hot pepper sauce, ginger and garlic. Blend together and stir in chicken strips. Cover dish and refrigerate to marinate for 3 to 4 hours.
  • In a wok or large skillet, place sesame seeds and dry-fry over medium heat, shaking the wok, until the seeds are a golden brown color. Remove seeds and set aside.
  • To same wok or skillet add sesame oil and vegetable oil and heat slowly. Drain chicken, reserving marinade, and stir-fry in wok a few pieces at a time, until browned. Remove chicken with a slotted spoon and set aside.
  • Add mushrooms and green bell pepper to same wok or skillet and stir-fry for 2 to 3 minutes. Add the scallions and stir-fry 1 minute more. Return chicken to wok, together with reserved marinade, and stir over medium high heat for another 2 to 3 minutes, or until the ingredients are evenly coated with the glaze. Sprinkle toasted sesame seeds on top and serve immediately.
  • Hot Sesame Chicken is ready to serve.
