Ingredients:

  • 6 Boneless chicken breasts
  • 2 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 1 Ginger (grated)
  • 2 Garlic flakes (crushed)
  • 2 Red ball peppers
  • 1/2 Cup mayonnaise
  • 6 Bread slices
  • salt and pepper to taste

How to make Grilled Chicken Sandwich:

  • Cut chicken into pieces.
  • Mix olive oil, lemon juice, crushed garlic and grated ginger well.
  • Marinate chicken with this mixture for 1 hour.
  • Grill the marinated chicken pieces till they get cooked properly.
  • Spread mayonnaise on bread slices.
  • Top with a grilled chicken piece and red ball pepper.
  • Top with a slice of bread.
  • Grilled Chicken Sandwich is ready.

Ingredients:

  • 2 slices Mozzarella Cheese
  • 2 slices Italian bread
  • 1/3 cup roasted red peppers, rinsed and dried
  • Fresh basil leaves (optional)
  • 1 tbsp Italian salad dressing

How to make Italian Grilled Cheese Sandwich:

  • Place slice of cheese on slice of bread; top with red peppers and, if desired, basil leaves.
  • Place remaining cheese on top; close with slice of bread.
  • Brush dressing over outside surfaces of bread.
  • Heat non-stick skillet over medium-low heat.
  • Cook sandwich 3 minutes per side or until golden brown and cheese is melted.

Ingredients:

  • 2-3 thin sliced quality cuts steak
  • seasoning salt
  • 1 small onion,minced
  • 2 Roma tomato,chopped
  • 2 cloves garlic,chopped
  • 2 cans whole roasted green chili peppers
  • 1 tbsp olive oil
  • 2-3 slices Monterrey jack pepper cheese

Method:

  • Heat olive oil in pan.
  • Saute onion, garlic and tomato for 3 minutes or until tender.
  • Set mixture aside.
  • Preheat oven to broil.
  • Cut green chilies into long strips and set aside.
  • Sprinkle seasoning salt on both sides of steak.
  • Broil steaks (I broil the thin cuts 3-4 minutes) on one side.
  • Remove from oven and place mixture of tomato, onion and garlic evenly on  unbroiled side of steaks.
  • Top with 2-3 strips of green chilies.
  • Next,place a slice of cheese on top of each steak
  • Broil until steak is done and cheese is melted (about 3 minutes).
  • Now Mexican Steak is ready to serve.

Ingredients:

  • 4 ears yellow corn, husked
  • 2 tsp olive oil
  • 1 large red tomato, seeded and chopped
  • 1 small jalapeno pepper, seeded and deveined
  • 1 garlic clove, minced
  • 2 tbsp diced red pepper
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh chopped cilantro leaves
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp ground cumin

Method:

  • In medium bowl, combine corn and remaining ingredients.
  • Cover and refrigerate until ready to serve.
  • Bring to room temperature before using.
  • Preheat oven to 400°F (205°C).
  • Brush corn with olive oil.
  • PLACE ears of corn on a baking sheet.
  • Roast 15 to 20 minutes until ears start to turn a light golden brown.

Chicken Soola Recipe

Ingredients:

  • Chicken, leg and breast pieces 450 gm
  • Almond paste 10 gm/2 tsp
  • Cooking oil or Clarified butter (ghee) 60 ml/4 tbs
  • Garlic paste, browned 10 gm/2 tsp
  • Ginger paste 5 gm/1 tsp
  • Khoya, grated 25 gm/5 tsp
  • Onion paste, browned 60 gm/ 1/4 cup
  • Raw papaya paste 120 gm/ 1/2 cup
  • Red chilli powder 10 gm/2 tsp
  • Roasted gram, powdered 2.5 gm/ 1/2 tsp
  • Salt to taste
  • Yogurt 10 gm/2 tsp

Directions:

  • Clean and dry chicken pieces and prick all over with a fork. Marinade with raw papaya and set aside for 12 hours or overnight. Remove papaya paste and discard. Do not wash chicken.
  • Mix together all ingredients except cooking oil and marinade chicken in it.
  • Skewer pieces close together, levelling the mixture from top to bottom. Wrap a string tatutly along skewered chicken to keep the pieces firm while cooking. Burn charcoal in the barbecue or grill till white ash appears on the surface and cook, keeping chicken pieces 6 inches above the fire. Cook on low fire till chicken is tender, then stroke fire to medium heat, baste chicken with a little oil at a time, till all the oil is over and the chicken is well browned. Alternatively, the chicken can be cooked in a preheated oven at 275 ºF for 15 minutes.

Prep Time: Overnight + 1 1/2 hours
Cook Time: 2 hours
Serves: Remove string and serve hot with mint chutney
