    1/2 cup granulated sugar

  • 1/2 cup applesauce
  • 2 tablespoons canola oil
  • 2 large eggs
  • 1 cup molasses
  • 1 1/2 cups all-purpose flour (about 6 3/4 ounces)
  • 1/2 cup flaxseed meal
  • 1/2 cup toasted wheat germ
  • 2 teaspoons baking soda
  • 1/2 to 1 teaspoon ground cinnamon
  • 1/2 to 1 teaspoon ground cloves
  • 1/2 to 1 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup hot water
  • Cooking spray
  • 1 tablespoon powdered sugar (optional)
  • Apple slices (optional)

How to make Ginger Cake

  • Preheat oven to 350°.
  • Combine first 3 ingredients in a large bowl; beat with a mixer at medium speed until well blended (about 1 minute). Add eggs, 1 at a time, beating well after each addition. Stir in molasses.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 7 ingredients (through salt) in a large bowl. Add flour mixture and 1 cup hot water alternately to sugar mixture, beginning and ending with flour mixture. Spoon batter into a 13 x 9-inch baking pan coated with cooking spray. Bake 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan. Cut into 12 squares; sprinkle with powdered sugar and serve with apple, if desired.

  • Sherry 1 tbsp.
  • Tomato puree 1tsp.
  • Pepper To taste
  • Salt To taste

How to make Ginger Chicken

  • Put the Soya sauce, onion, ginger, garlic, vinegar, sugar, tomato puree, salt and pepper in a
    saucepan.
  • Bring to a boil and simmer for 2 minutes.
  • Soak the dried mushrooms in warm water for half an hour. Then drain, rinse and cut into thin slices.
  • Heat the oil in a saucepan and add the chicken shreds. Cook for 3-4 minutes.
  • Add the stock and the Soya sauce mixture, together with the cornflour mixed with sherry, to the chicken.
  • Add the mushrooms and cook till sauce thickens slightly.
  • Ginger Chicken is ready to serve.

How to make Ginger snap Cookies

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter and the brown sugar until fluffy. Add molasses and eggs and mix well.
  • Combine flour, ground ginger, baking soda and salt and add to butter mixture. Blend in fresh and candied ginger. Drop by teaspoonfuls onto parchment covered baking sheet, about 2 inches apart. Bake about 10 minutes, or until lightly golden. Cool.

    3/4 cup whole almonds with skins

  • 1/2 cup crystallized ginger
  • 1 cup unbleached all-purpose flour
  • 1/2 cup sugar

  • 1/4 teaspoon baking soda
  • 1 large egg
  • 1 large egg white
  • 1/2 teaspoon vanilla
  • Special equipment: an 11- by 4-inch loaf pan (see note, above)

How to make Ginger Almond Biscotti

  • Preheat oven to 300°F. Butter loaf pan and line bottom with wax paper.
  • In a shallow baking pan toast almonds in middle of oven until a shade darker, about 10 minutes. Cool nuts and very coarsely chop. Finely chop crystallized ginger. Into a bowl sift together flour, sugar, ground ginger, salt, and baking soda. In another bowl with an electric mixer beat together whole egg, egg white, and vanilla. Stir in flour mixture and beat until combined well. Stir in almonds and crystallized ginger.
  • Press dough into loaf pan and bake in middle of oven until pale golden, about 45 minutes. Turn loaf out onto a rack and cool 10 minutes. On a cutting board with a serrated knife cut loaf crosswise into 1/8-inch-thick slices. Arrange biscotti on a baking sheet and bake in middle of oven until crisp, about 15 minutes. Cool biscotti on rack. Biscotti keep in an airtight container at cool room temperature 2 weeks.

  • Bring water and ginger to a boil in a 1- to 1 1/2-quart saucepan, then remove from heat. Stir in tea and cover. Let stand 3 to 5 minutes. Stir in milks, then pour through a sieve into a large (6-cup) blender, pressing hard on and then discarding solids. Blend until foamy (use caution when blending hot liquids), then pour into mugs and sweeten with more condensed milk if desired.
