    Tomato Salad with Feta Cheese Recipe

    4 pints grape tomatoes, red or mixed colors

  • 1 1/2 cups small-diced red onion (2 onions)
  • 1/4 cup good white wine vinegar
  • 6 tablespoons good olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh parsley leaves
  • 1 1/2 pounds feta cheese

How to make Tomato Salad with Feta Cheese

  • Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.
  • Tomato Salad with Feta Cheese is ready to serve.

Chicken with Fennel and Feta Cheese recipe

Ingredients:

  • 2 Tbs olive oil
  • 1/2 cup cream
  • 2 tsp fresh thyme
  • 1 red onion sliced
  • 3/4 cup chicken stock
  • 2 cloves garlic crushed
  • salt and pepper to taste
  • 90g feta cheese crumbled
  • 2 small fennel bulbs sliced
  • 4 cups mixed lettuce leaves
  • 3 chicken breast fillets thinly sliced

Method:

  • Heat olive oil in a large wok and stir fry chicken until browned then remove the chicken from wok.
  • Add onion and garlic to the wok and stir fry 3 minutes until onion softens then add fennel and thyme and stir fry a further 5 minutes.
  • Add chicken, stock and seasoning to the wok and bring to the boil then reduce heat and simmer 10 minutes or until fluid has condensed.
  • Add cream and cheese and gently heat through.
  • Serve the Chicken with Fennel and Feta Cheese with lettuce.
