1/2 pound Dry Cannellini Beans or Other White Beans

- Three tablespoons Olive Oil
- Two pounds Fresh Escarole, washed
- Four quarts Cold Water or even Chicken Broth (much more if needed)
How to make Escarole and Bean Soup
