How to make Puff Pastry Valentine Cookies

  • Thaw pastry sheet at room temperature for 30 minutes. Preheat oven to 400 degrees F.
  • Unfold pastry sheet on lightly floured surface. Roll into 14×10-inch rectangle. Cut out 12 hearts, using a 3 1/2-inch heart-shaped cookie cutter. Place on baking sheet. Brush with caramel topping and sprinkle with almonds.

How to make Valentine Sugar Cookies

  • In a bowl, cream butter and sugar. Add egg and extracts. Stir in flour; mix well. Chill several hours.   • 1/4 teaspoon salt
  • 1 3/4 cups chopped cashews
  • 1/2 cup butter
  • 3 tablespoons heavy whipping cream
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

How to make Cashew Cookies

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the 1/2 cup butter and sugar until light and fluffy. Add the egg, beating well, then stir in the sour cream and 1 teaspoon vanilla. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Fold in cashew pieces. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  • To make the frosting, melt 1/2 cup butter in a saucepan over medium heat. Cook until butter turns a light brown color, be careful not to burn it. Remove from heat and stir in the cream. Gradually beat in the confectioners’ sugar and 1 teaspoon vanilla until smooth. Spread onto cooled cookies.

How to make Walnut Chocolate Cookies

  • In a medium bowl, sift the flour, cocoa, baking powder, and salt onto a piece of parchment or wax paper. Set aside. In a mixer, beat the butter and sugar until fluffy, about 2 to 3 minutes. Add eggs and vanilla, and mix until combined. On low speed gradually add the flour mixture and mix until incorporated. With a wooden spoon, mix in the walnuts. Add the melted chocolate and milk, and stir to combine well. Refrigerate dough until firm, about 30 minutes.

    450 gms. Plain flour

  • 250 gms. Ghee soft, solidified
  • 250 gms. Sugar powdered
  • 40 gms. Cocoa powder
  • 10 gms. Instant coffee powder

How to make Mocha Cookies

  • Sieve flour once. Add coffee powder and cocoa and sieve again.
  • Push through all coffee and cocoa from sieve. In a large plate, take ghee, rub with palms till soft.
  • Add sugar and rub again till light and creamy. Add flour and mix well with light hands.
  • Shape dough into small flat patties. Place on a greased baking sheet.
  • Preheat oven to 160oC for 10 minutes. Place cookies on central rack.
  • Bake at 150oC for 10 minutes. Rotate is necessary.
  • Continue at 140oC for 10 minutes or till light golden brown. Cool completely on a wire rack before storing in airtight jar.
  • Serve warm or cold with tea, coffee, shakes, etc.

How to make Walnut Snowball Cookies

  • Preheat oven to 350°F. Line 2 large baking sheets with parchment paper. Sift first 4 ingredients into medium bowl. Transfer 2 tablespoons flour mixture to processor; add walnuts. Process until walnuts are finely chopped.
  • Using electric mixer, beat butter in large bowl until fluffy. Add 1 cup powdered sugar and beat until well blended. Add egg yolk, brandy, and vanilla and beat to blend. Beat in flour mixture. Add walnut mixture; stir with spatula to blend. Using 1 tablespoon dough for each cookie, shape dough into balls; arrange on prepared sheets, spacing 1 inch apart.
  • Bake cookies 12 minutes. Reverse sheets. Bake cookies until brown on bottom, cracked on top and just beginning to color, about 12 minutes longer. Sift remaining 1 1/2 cups powdered sugar thickly over hot cookies and cool on sheets. (Can be made 4 days ahead. Store airtight between sheets of waxed paper at room temperature.)
