    1 (16 ounce) package macaroni

  • 1 pound sharp Cheddar cheese, sliced

How to make Classic Macaroni and Cheese

  • Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Grease a 2 quart casserole dish. Place a quarter of the macaroni in the bottom, followed by an even layer of one-quarter of the cheese slices. Dot with butter and season with salt and pepper. Repeat layering three times. Pour evaporated milk evenly over the top of all.
  • Bake, uncovered, for one hour, or until top is golden brown.

    1 cup of finely chopped onion

  • 1 celery rib, chopped fine
  • 1 Tbsp minced garlic
  • 1 carrot, chopped fine
  • 1/2 cup of finely chopped scallions (can substitute onion)
  • 2 Tbsp unsalted butter
  • 2 teaspoon salt (use 1 1/2 teaspoons if using Italian sausage)
  • 1 1/2 tsp freshly ground pepper
  • 2 tsp Worscestershire sauce
  • 2/3 cup ketchup
  • 1 1/2 pounds of ground chuck
  • 3/4 pound of spicy ground pork sausage or Italian sausage (a mix of sweet and hot if you are using links)
  • 1 cup fresh bread crumbs
  • 2 large eggs, beaten slightly
  • 1/3 cup minced fresh parsley leaves

How to make Classic Meatloaf

  • Preheat oven to 350 degrees F.
  • In a large heavy skillet cook the onion, celery, carrot, garlic, and scallions in butter, over medium heat, stirring, for about 5 minutes. Cover the skillet and stir occassionally until the carrots are tender, about 5 more minutes. Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup. Cook for 1 more minute.
  • In a large bowl, combine the meats, eggs, vegetables, bread crumbs, and parsley. Form into a loaf and put into a rectangular baking pan with 2-inch high sides. Cover the loaf with remaining ketchup.
  • Bake the meatloaf in the oven for 1 hour.
  • Serves 4 to 6, with plenty for leftovers for meatloaf sandwiches.

  • 4 cups uncooked elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup distilled white vinegar
  • 2/3 cup white sugar
  • 2 1/2 tablespoons prepared yellow mustard
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1/4 cup grated carrot (optional)
  • 2 tablespoons chopped pimento peppers (optional)

How to make Classic Macaroni Salad

  • Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
  • In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

  • 1/2 cup mayonnaise
  • 2 tablespoons celery, chopped
  • 2 teaspoons Dijon mustard
  • Few dashes hot-pepper sauce

  • Bread or toast

How to make Classic Egg Salad

  • In a medium bowl, coarsely chop 8 peeled hard-cooked eggs.
  • Add 1/2 cup mayonnaise, 2 tablespoons chopped celery, 2 teaspoons Dijon mustard, and a few dashes of hot-pepper sauce (or more, if you like a spicier salad). Season to taste with salt and pepper; stir gently to combine. Serve with greens — such as lettuce or watercress on bread or toast.

  • 2 medium onions, chopped
  • 2 tablespoons olive oil, divided
  • 4 garlic cloves, minced
  • 1 pound lean ground beef
  • 1 (14.5-oz.) can basil, garlic, and oregano diced tomatoes
  • 2 (6-oz.) cans tomato paste
  • 1 (8-oz.) can basil, garlic, and oregano tomato sauce
  • 1 bay leaf
  • 1 teaspoon Italian seasoning
  • 1 1/4 teaspoons salt, divided
  • 3/4 teaspoon pepper, divided
  • 12 lasagna noodles, uncooked
  • 8 cups boiling water
  • 1 (16-oz.) container ricotta cheese
  • 2 large eggs, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 2 (6-oz.) packages part-skim mozzarella cheese slices
  • Garnish: chopped fresh parsley

How to make Classic Lasagna:

  • Sauté onion in 1 Tbsp. hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add garlic, and sauté 1 minute. Add beef, and cook, stirring occasionally, 10 minutes or until beef crumbles and is no longer pink. Drain beef mixture, and return to skillet. Stir in diced tomatoes, next 4 ingredients, 1 tsp. salt, and 1/2 tsp. pepper; bring to a boil. Reduce heat, cover, and simmer, stirring occasionally, 30 minutes. Remove and discard bay leaf; set meat sauce aside.
  • Place lasagna noodles in a 13- x- 9-inch pan. Carefully pour 8 cups boiling water and remaining 1 Tbsp. olive oil over noodles. Let stand 15 minutes.
  • Stir together ricotta cheese, eggs, Parmesan cheese, remaining 1/4 tsp. salt, and remaining 1/4 tsp. pepper until blended.
  • Spoon half of the meat sauce mixture in a lightly greased 13- x 9-inch baking dish. Shake excess water from noodles, and arrange 6 noodles over meat sauce; top with half of ricotta mixture and 1 package mozzarella cheese slices. Repeat layers once.
  • Bake, covered, at 350° for 55 minutes. Uncover and bake 10 to 15 more minutes or until bubbly. Let lasagna stand 10 minutes before serving. Garnish, if desired.
