    6 cups sultana raisins

  • 3 cups dried currants

  • 3 1/4 cups all-purpose flour

  • 1/2 teaspoon ground cloves

  • 2 cups white sugar
  • 12 egg yolks
  • 1/2 cup molasses
  • 12 egg whites
  • 1/2 cup grape juice
  • 1/2 cup strong brewed coffee

How to make Dark Rich Christmas Cake

  • Wash and dry the raisins and the currants. Wash, dry, pit, and chop the dates. Chop the raisins and the citrus peel. Slice the cherries. Blanch the almonds, and slice them lengthwise. Combine fruits and nuts in large bowl.
  • Grease and line 3 standard Christmas cake pans (these round pans are at least 3 inches deep and come in a set of three sizes- 5, 7, and 9 inch across) with 4 layers of heavy waxed paper, or 3 layers of brown paper. Grease again. Preheat oven to 275 degrees F (135 degrees C).
  • Sift together flour, baking powder, soda, salt, and spices onto a piece of waxed paper. Remove 1 cup of this flour mixture, and combine with fruit and nuts. Mix until fruit is well coated.
  • Cream the butter until fluffy. Add extracts. Gradually add sugar, mixing until creamy. Beat egg yolks until light and lemon-colored, and beat into the butter mixture. Stir in the molasses, and beat together well. Add half of the remaining flour mixture, and blend thoroughly.
  • Beat egg whites until stiff but not dry; fold into batter. Stir in lightly the remaining flour mixture alternately with combined fruit juice and coffee. Add floured fruit and nuts, blending in until fruit is well distributed.
  • Turn batter into prepared cake tins, filling each about 2/3 full and spreading batter evenly. Bake in center of oven. Bake small cake 2 1/2 hours, medium cake 3 1/2 hours, and large cake 4 to 4 1/2 hours. Remove from oven and allow to stand 5 minutes, then turn out on wire rack to cool.

  • 50g Nestle Plaistowe Dark Cooking Chocolate, melted, extra

How to make Traditional Christmas Cake

  • Combine sultanas, currants, raisins, cherries, peel and rum in a large bowl, cover, and stand for 1 hour or until ready to use.
  • Preheat oven to 160°C. Grease and line base and sides of a round 23cm (base measurement) deep cake pan with two layers each of brown paper and baking paper.
  • Place butter, sugar and vanilla in a bowl and beat until light and creamy. Add eggs, one at a time, beating well after each addition. Beat in chocolate and jam.
  • Add creamed mixture to fruit mixture with sifted flour, cinnamon, mixed spice and almonds, and mix well.
  • Spoon mixture evenly into prepared pan. Bake for 2 1/2 -3 hours or until cooked. Cover cake and allow to cool in pan overnight.
  • Place 2 sheets of baking paper on a flat surface. Spread thinly and evenly with extra dark chocolate on one and white chocolate on the other. Set aside to cool. When almost set, cut out stars with pastry cutters. Place in the fridge until completely set. Dust cake with icing sugar and decorate with stars to serve.

    7 pounds large cucumbers

  • 1 cup pickling lime (calcium hydroxide)
  • 2 teaspoons red food coloring
  • 1 teaspoon powdered alum
  • 1 cup distilled white vinegar
  • 7 cups white sugar
  • 2 cups distilled white vinegar
  • 2 cups water
  • 1 cup cinnamon red hot candies
  • 4 cinnamon sticks

How to make Christmas Red Pickles

  • Peel cucumbers, halve lengthwise, and scrape out the seeds with a spoon. Cut the cucumber into 1/4 inch half circles, and place into a glass or ceramic crock. Dissolve the pickling lime in about 1 quart of room temperature water, pour over the cucumbers, then add additional water until the cucumbers are covered by 1/2 inch. Let stand at room temperature 24 hours.
  • Drain the cucumbers and rinse well with cold water. Place into a large stockpot, and cover with cold water. Allow to stand for 3 hours, then drain and rinse again.
  • Return the cucumbers to the pot, add the food coloring, alum, 1 cup vinegar, and enough water to cover by 1/2 inch. Bring to a boil over high heat, then reduce heat to a simmer, and cook 2 hours. Once the cucumbers have cooked for 2 hours, drain and allow to cool a bit before placing into the glass or ceramic jar.
  • Stir together sugar, 2 cups vinegar, 2 cups water, cinnamon red hot candies, and cinnamon sticks in a saucepan over medium heat until the sugar and candies dissolve. Pour this mixture over the warm cucumbers, cover, and let stand overnight.
  • Pack pickles into pint jars, and process in a hot water bath for 15 to 20 minutes. Refrigerate any jars that do not seal.
  • Christmas Red Pickles is ready to serve.

Rainbow Cake Recipe

Ingredients:

  • 170 gm butter,soft
  • 170 gm Castor sugar
  • 3 eggs
  • 1 tsp vanilla essence
  • 170 gm cake flour
  • 4 tsp baking powder
  • 3 tbsp milk
  • food colors(Pink,Yellow,Green or more)

Method:

  • Preheat oven at 180 C.
  • Grease a 9″ inch round cake tin,line base with greaseproof paper.
  • Grease paper.
  • Sift flour and baking powder together.
  • Beat butter and sugar until creamy.
  • Add eggs one at a time and continue beating until thick and creamy.
  • Add vanilla and beat again to mix.
  • Gradually add flour to the butter mixture.
  • Add milk and beat until smooth.
  • Divide mixture into 4 portions and color three portion with the food colors.
  • Spoon a tbsp of plain mixture into the center of cake tin.
  • Then spoon a tbsp of pink mixture on it,then yellow,then green.
  • Repeat until you are done with batter(The last layer should be plain).
  • Try to consistent with every color.
  • Bake on 180 C for 45-50 minutes or till cake is done.
  • Turn cake on wire rack and leave to cool before cutting.
  • Spread your favorite frosting over cake.
  • Sprinkle colored sugars on top to make rainbow design.
  • Rainbow Cake is ready to eat.

Maple Glazed Sweet Potato Recipe

Ingredients:
  • 1 1/2 pounds sweet potatoes or yams, cooked, peeled and quartered
  • 1/2 cup Pure Maple Syrup
  • 1/2 cup orange juice
  • 3 tablespoons margarine or butter, melted
  • 1 tablespoon cornstarch
  • 1 teaspoon grated orange peel
Method:
  • Preheat oven to 350°F Arrange sweet potatoes in 1 1/2 quart shallow baking dish.
  • Combine remaining ingredients; pour over potatoes.
  • Bake 40 minutes or until hot and sauce is thickened, basting frequently.
  • Refrigerate leftovers.

Christmas Roast Turkey Recipe

Ingredients:

  • 1 (18 pound) Fresh Whole Turkey, neck and giblets removed
  • 2 cups kosher salt
  • 1/2 cup butter, melted
  • 2 large onions, peeled and chopped
  • 4 carrots, peeled and chopped
  • 4 stalks celery, chopped
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup dry white wine

Method:

  • Rub the turkey inside and out with the kosher salt.
  • Place the bird in a large stock pot, and cover with cold water.
  • Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly rinse the turkey, and discard the brine mixture.
  • Brush the turkey with 1/2 the melted butter.
  • Place breast side down on a roasting rack in a shallow roasting pan.
  • Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme, and the bay leaf.
  • Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine.
  • Roast uncovered 3 1/2 to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180 degrees F (85 degrees C).
  • Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter.
  • Allow the bird to stand about 30 minutes before carving.

  • Preheat oven to 275 degrees F (135 degrees C).
  • Grease an 8x8x3 inch fruit cake pan, line with parchment paper, and grease again.
  • In a small bowl, mix together 2 cups flour, baking soda, cloves, allspice, cinnamon, and salt; set aside.
  • In a large bowl, cream butter until light.
  • Gradually blend in brown sugar and eggs.
  • Mix together molasses and apple juice.
  • Beat into butter mixture alternately with flour mixture, making 4 dry and 3 liquid additions. Fold in floured fruit.
  • Turn batter into prepared pan.
  • Bake in preheated oven for 3 to 3 1/2 hours, or until a toothpick inserted into the center of cake comes out clean.
  • Remove from pan, and lift off paper.
  • Cool cake completely, then wrap loosely in waxed paper.
  • Store in an airtight container.
