Chicken Chinese Rice Recipe

  • 4 cups cold cooked rice
  • 8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped
  • 2 eggs (more if desired)
  • 1/2 cup green peas
  • 1 medium onion, diced
  • 1 green onion, diced
  • Seasonings (add according to taste):
  • Light Soy Sauce
  • Oyster sauce
  • Salt
  • Pepper
  • Oil for stir-frying, as needed

How to make Chicken Chinese Rice:

  • Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).
  • Chop the chicken meat and dice the onion and green onion.
  • Heat wok and add oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.
  • Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas.
  • Add oil, turn down the heat to medium and stir-fry the rice. Add the soy sauce, salt, pepper and oyster sauce. Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. (Alternately, you can mix the green onion and egg in with the other ingredients).

  • 1 egg
  • 2 teaspoons Asian sesame oil
  • 2 tablespoons vegetable oil
  • 3 cups leftover cooked rice (200 g, 7 ounces dry weight before cooking)
  • 100 grams/4 ounces frozen peas (defrosted)
  • 4 spring onions (green onions), finely chopped
  • 100 grams/4 ounces bean sprouts
  • 1 to 2 teaspoons soy sauce
  • Ground white pepper, to taste

How to make Chinese Egg Fried Rice:

  • Beat the egg and sesame oil in a small bowl.
  • Heat the vegetable oil in a large frying pan. When the oil is shimmering and almost smoking add the rice and stir-fry for 3 to 4 minutes, until completely heated through.
  • Add the peas, spring onion and bean sprouts. Stir-fry for about 3 minutes, turning the rice constantly.
  • Season well with soy sauce and pepper, then push to one side of the pan. Pour the beaten egg on the other side of the pan and leave for about 10 seconds to set.
  • Using a chopstick, stir around the egg to break it up and then toss around with the rice. Stir-fry for a further minute and serve.

  • 1 (8 ounce) package dried rice noodles
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1/2 tablespoon chili sauce
  • salt and pepper to taste
  • 1 green onion, chopped

How to make Chinese Rice Noodles:

Bring a large pot of water to a boil. Add rice noodles, and cook for 4 to 5 minutes or until al dente; drain.
Heat oil in a large skillet over medium heat. Saute garlic until tender. Stir in noodles, and season with soy sauce, chili sauce, salt and pepper. Sprinkle top with chopped green onion.

  • 2 cups Rice
  • 3 tbsp Oil
  • 100 gms Beans Finely Chopped
  • 2 Carrot Finely Chopped
  • 1 Onion Sliced
  • 100 gms Cabbage Finely Chopped
  • 2 Spring Onions Finely Chopped
  • 2-3 Green Chilies cut lenghtwise
  • 1 tsp Ginger Chopped Finely
  • 1 tsp Garlic Finely Chopped
  • 2 tbsp Soya Sauce
  • Salt & pepper to taste

How to make chinese rice:

  • Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
  • Boil water, add rice and little salt.
  • Cook uncovered on low heat till rice is tender.
  • Take care not to overcook the rice. Each grain of rice should be separate.
  • When rice is done, drain and add soom cold water and drain again using a large seive and set aside.
  • Heat oil in a kadhai / large pan and stir fry all the chopped vegetables.
  • Cook for 3-4 minutes.
  • Take care that vegetables are not overdone, they should be crisp.
  • Mix salt and pepper to taste.
  • Add the cooked rice and mix well. Now mix the soya sauce to it.
  • Cook the chinese fried rice for 2-3 minutes and serve hot.

Ingredients

    2 slightly beaten eggs

  • salt and ground pepper
  • 1 medium white onion
  • 4 green onions
  • 8 ounces of ham
  • 1 tablespoon peanut oil (for step 1)
  • 1 tablespoon peanut oil (for step 2)
  • 4 cups pre-cooked and refrigerated long grain rice
  • 1.5 ounces of frozen green peas
  • 2 tablespoons Soy sauce
  • 8 ounces cooked shrimp

How to make Fried Chinese Rice

  • Add salt and pepper to the eggs. Chop the onion in 8 parts and dice. Make small slices of ham and dice. Heat the peanut oil in a wok or pan at medium heat. Add the eggs while progressively bringing the cooked parts of the egg in the middle of the wok. Once all cooked, broil the eggs with a spatula. Take out of the wok or pan and leave aside.
  • Heat up over medium-high heat the second tablespoon of peanut oil. Make sure that it is spread and covers the bottom and lower sides of the wok or pan. Add the diced onion and cook until it becomes transparent. Stir in the ham for about 1 minute. Incorporate the pre-cooked rice and sauté for 3 minutes in order to heat it. Add in the eggs, Soya sauce, green onions and shrimps. Reduce the heat to medium. Stir the rice mixture until everything is warm and ready to serve.

Serve 4 people.
