    Chicken boneless 250 grams

  • Mushroom 1 cup
  • Green onion 1 cup
  • Chicken stock 4 cups
  • Finely chopped ginger 1 tbsp
  • Vinegar 1 tbsp
  • Soy sauce 1 tbsp
  • White pepper ½ tsp
  • Salt ½ tsp

How to make Chicken and mushroom clear soup

  • In 4 cups stock add 250 grams chicken, 1 cup finely chopped mushrooms, 1 tbsp finely chopped ginger and ½ tsp salt and cook for 15 minutes on low flame.
  • Now add 1 cup green onion, ½ tsp white pepper and 1 tbsp vinegar and turn off the stove.
  • Now pour it in a dish and serve hot with 1 tbsp soy sauce.
  • Chicken and mushroom clear soup is ready to serve.

Ingredients:

  • Meat ½ kg
  • Boiled gram lentil ½ cup
  • Ginger 1 piece
  • Garlic 6
  • Egg 1
  • Onion 1
  • Tomato 1
  • Large cardamom 2
  • Bread pieces 6
  • Whole red chilies 12
  • Fennel seeds 1 tsp
  • Whole coriander 1 tsp
  • Salt 1 tsp
  • Cumin 1 tsp
  • Whole black pepper 1 tsp
  • All spice powder 1 tsp
  • Garlic sauce as required
  • Oil (for frying) as required

How to make Shami Sandwich by Rida Aftab

  • Cook ½ kg meat with 1 tsp whole black pepper, 1 tsp fennel seeds, 1 tsp whole coriander, 1 tsp salt, 1 tsp cumin, 12 whole red chilies, 2 large cardamoms, 1 piece ginger, 6 garlic cloves and 2 glasses of water on low flame.
  • When the meat becomes tender add ½ cup boiled gram lentil and chopperize it.
  • Then add 1 egg and 1 tsp all spices powder and form into kababs. Fry in the required oil.
  • Now take 6 pieces of bread, spread with garlic sauce and put the kababs on it.
  • Now put the onions and tomatoes on it. Sandwich with another piece of bread.
  • Cut it from the middle.

Ingredients:

  • Mutton chops ½ kg
  • Papaya 1 tsp
  • Black pepper ½ tsp
  • Salt ½ tsp
  • Ginger garlic paste 2 tsp
  • Cumin 2 tsp
  • Clarified butter 4 tbsp

How to make Kali mirch chops

  • Marinate ½ kg mutton chops with 2 tsp ginger garlic paste, 1 tsp raw papaya, ½ tsp salt and 2 tsp cumin for half an hour.
  • Now heat the clarified butter, add chops. Now cover the pan for 20 minutes.
  • Now fry it on high flame and add black pepper and turn off the stove.
  • Kali mirch chops is ready to serve.

Ingredients:

  • Boiled black chick peas ½ kg
  • Onion 1
  • Green chilies 6
  • Oil 1 cup
  • Coriander leaves ½ bunch
  • Tomato 250 grams
  • Hot spices powder 1 tsp
  • Salt 1 tsp
  • Ginger garlic paste 1 tbsp
  • Whole coriander 1 tbsp
  • Carom seeds ½ tsp
  • Red chili powder 2 tsp
  • Turmeric 2 tsp
  • Coriander powder 2 tsp
  • Cumin 2 tsp
  • Fennel seeds ` 2tsp

How to make Kala Chana Gravy

  • Heat oil in a pan, add 1 onion and golden brown it.
  • Now blend 250 grams tomatoes and take them out.
  • Now in the same oil add 2 tsp red chili powder, 2 tsp salt, 2 tsp turmeric, 2 tsp coriander powder and 1 tbsp ginger garlic paste and fry them all together.
  • Then add ½ kg boiled chickpeas and mix them well.
  • Fry 2 tsp cumin, 1 tbsp whole coriander, 2 tsp fennel seeds and ½ tsp carom seeds and crush them.
  • Now add 6 green chilies, ½ bunch coriander leaves, 1tsp hot spices powder and fried masala in chick peas and turn off the stove.
  • Kala Chana Gravy is ready to serve.

Zafraani Zarda Khoya – Rida Aftab Recipe

Ingredients:

  • Boiled rice ½ kg
  • Sugar 250 grams
  • Khoya 250 grams
  • Clarified butter 250 grams
  • Cardamom 6
  • Zafran ½ tsp
  • Kewra ½ tsp
  • Orange food color ½ tsp
  • Raisins 2 tbsp
  • Almonds/pistachios 2 tbsp
  • Coconut 2tbsp
  • Asharfiyan 2 tbsp

How to make Zafraani Zarda Khoya

  • In a pan boil ½ kg rice and add ½ tsp orange food color and then sieve.
  • Now in another pan heat 250 grams clarified butter and add 6 cardamoms.
  • As the aroma arises from cardamoms add 250 grams sugar and ½ cup of water.
  • When the syrup gets ready add 2 tbsp almonds and pistachios, ½ tsp zafran, 2 tbsp asharfiyan, 2 tbsp raisins, 2 tbsp coconut, 250 grams khoya and ½ tsp kewra in rice. Cover the pan and leave it for half an hour.
  • Delicious special zarda is ready to serve.

Bread Barfi – Rida Aftab Recipe

Ingredients

  • Milk ½ liter
  • Sugar 250 gm
  • Bread slices 4
  • Khoya 1 cup
  • Pistachios chopped 50 gm
  • Kewra water 1 tbsp
  • Cardamom ground ½ tsp
  • Butter 2 tbsp

How to make Bread Barfi

  • Soak 4 bread slices in ½ liter milk for 2 hours. Now blend well and keep aside.
  • Now put this mixture in a wok and cook over low flame. Stirring continuously till water dries.
  • Add 250 gm sugar, ½ tsp ground green cardamoms and 1 tbsp Kewra water. Cook over low flame.
  • Also add 1 cup crumbled khoya.
  • Grease tray with 2 tbsp butter, pour bread mixture in it and bake in a preheated oven for 30 minutes.
  • Now remove and cut into pieces, sprinkle with 50 gm chopped pistachios.
  • Bread Barfi is ready to serve.

Strawberry Thick Triple Layer Shake

Ingredients

  • Strawberry 1 tin
  • Cream 1 packet
  • Strawberry jelly 1 packet
  • Walnut 100 gm
  • Castor sugar 2 tbsp

How to make Strawberry Thick Triple Layer Shake

  • Sprinkle 2 tbsp castor sugar on 1 tin strawberry, put in freezer.
  • Also freeze 1 packet cream till firm.
  • Dissolve 1 packet of strawberry jelly in 2 cup warm water, pour in serving glasses and keep aside till firm.
  • Now blend together strawberries and chilled cream. Pour in glasses, garnish with 100 gm walnut and fresh cream.

Ingredients

  • Flour 2 cups
  • Salt a pinch
  • Caster sugar 1 cup
  • Eggs 2
  • Cream ½ cup
  • Butter 100 gm
  • Baking powder 1 tsp
  • Vanilla essence 1 tsp
  • Milk as required
  • Oil for fry

Ingredients for Vanilla Glazed

  • Caster sugar 1 cup
  • Vanilla essence ½ tsp
  • Milk 3 tbsp

How to make Bites Sized Cake Donuts

  • In a bowl mix together 2 cup flour, a pinch of salt, 1 tsp baking powder, 100 gm butter, 1 cup caster sugar, 2 eggs, 1 tsp vanilla essence and ½ cup cream. Knead well with milk as required and keep aside for 1 hour.
  • Now roll and cut into rounds using donut cutter.
  • Now fry in oil till golden brown, then remove and keep aside.
  • Method for Vanilla Glazed: Mix together 1 cup caster sugar, ½ tsp vanilla essence and 3 tbsp milk. Mix well, spread on top of each donut.

Ingredients

  • Chicken mince ½ kg
  • Onion chopped 1
  • Tortillas 4
  • Olives 10
  • Milk 1 cup
  • Mozzarella cheese 1 cup
  • Cheddar cheese 1 cup
  • Oregano 1 tsp
  • Salt 1 tsp
  • Garlic crushed 1 tbsp
  • Cumin seeds 2 tsp

Ingredients for Salsa Sauce

  • Tomato ketchup 1 cup
  • Green chilies 2
  • Capsicum 1
  • Onion 1
  • Tomato 1
  • Butter 50 gm
  • Crushed black pepper 1 tsp
  • Brown sugar 1 tbsp
  • Crushed red pepper 2 tsp
  • Salt ½ tsp
  • Vinegar 2 tbsp

How to make Mexican Lasagna

  • Boil ½ kg chicken mince with 1 chopped onion, 1 tbsp crushed garlic, 1 tsp salt and 2 tsp cumin seeds.
  • In a pan put together 1 cup milk, 1 cup mozzarella cheese and 1 tsp oregano leaves. Cook till cheese melt.
  • Mix together 1 cup ketchup, 2 tbsp vinegar, 1 tbsp brown sugar, 2 tsp crushed red pepper, 2 chopped green chilies, 1 tsp crushed black pepper, 1 chopped capsicum, 1 chopped onion, 1 chopped tomato, ½ tsp salt and 50 gm butter.
  • Mix well to make salsa sauce.
  • Now grease and oven proof tray, put a tortilla on the base, spread with salsa sauce, top with some of chicken mixture. now spread with melted cheese mixture.
  • Put another tortilla on top and repeat the same.
  • Lastly put the remaining cheese and chopped olives on top.
  • Bake in a preheated oven of 200 degrees for 20 minutes.
  • Mexican Lasagna is ready to serve.

Chewy Chocolate Brownies – Rida Aftab Recipe

Ingredients

  • Flour 1 cup
  • Eggs 3
  • Chocolate 8 ounces
  • Sugar 1 cup
  • Walnut ½ cup
  • Butter 100 gm
  • Vanilla essence ½ tsp
  • Baking powder ½ tsp
  • Salt ¼ tsp

How to make Chewy Chocolate Brownies

  • In a bowl put together 8 ounces chocolate, 100 gm butter, 1 cup sugar and 2 tbsp water. put in microwave for 2 minutes.
  • Sieve together 1 cup flour, ½ tsp baking powder and ¼ tsp salt. Mix well.
  • Cool the chocolate mixture, add in 3 eggs and beat well. Now fold in sieved flour mixture.
  • Also add ½ cup walnut and ½ tsp vanilla essence. Mix well.
  • Pour this mixture in greased oven proof dish, bake in a preheated oven of 180 degrees for 30 minutes.
  • Remove, cut into squares.
