Masala Chai Recipe

Ingredients

  • 5 tsp black tea leaves
  • 2 green cardamom pods
  • Small bit of cinnamon
  • 4 white colored peppercorns
  • ¼ tsp fennel seeds
  • a number of slices of dried ginger
  • 3½ tbsp light brown sugar, or to taste
  • ½ tsp salt

How to make Masala Chai

  1. Bring themilk and water, tea leaves, and whole spices to a vigorous boil in a heavy-bottomed saucepan set over high heat.
  2. Reduce the heat, stir in the sugar and salt, then simmer the mixture for 5 minutes, stirring occasionally.
  3. Check for sweetness and strength strain and sweetness.
  4. Masala Chai is ready to serve hot.

    1 cup nonfat dry milk powder

  • 1 cup powdered non-dairy creamer
  • 1 cup French vanilla flavored powdered non-dairy creamer
  • 2 1/2 cups white sugar
  • 1 1/2 cups unsweetened instant tea
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cardamom

How to make Chai Tea Mix

  • In a large bowl, combine milk powder, non-dairy creamer, vanilla flavored creamer, sugar and instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder.
  • To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water.
  • Chai Tea Mix is ready to serve.

Chai Coffee Recipe

For the Tea:

    1 Cinnamon stick

  • 2 Green cardamom pods
  • 3 Cloves
  • 1/2 cup of Nido dry milk (you can use any dry milk)
  • 2 cups of water
  • 1 teaspoon of Indian tea
  • 4 teaspoons of sugar or Splenda (more or less depending how you like it).

For Coffee

  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground green cardamom
  • 3 ground cloves to the coffee grounds

How to make Chai Coffee

  • Many people travel and return home and want to have the tea they experienced in their trip to India or Eastern travels. Chai tea has become a popular flavored tea. It has a spicy flavor and is easy to make. This recipe can be used in Tea or Coffee with a few simple variations in the preparation.
  • For the tea: Take a Cinnamon stick, the green cardamom pods and cloves. Add the Nido dry milk and water(you can use any dry milk or 2 cups of regular milk and leave out the water) to a saucepan with the Indian tea (available in the ethnic section of your grocery or coffee and tea section) It is also available everywhere online. Add the sugar or sweetener (more or less depending how you like it). Bring it to a boil (the edges will start to foam when it does remove it) and let stand for a couple minutes. Use a strainer and pour the Chai Tea into cups
  • This can also be added to Coffee. To make it in coffee add 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground green cardamom, 3 ground cloves to the coffee grounds, mix it well and make your coffee as usual. Pour into cup add the amount of dry milk and sugar you prefer.
  • This can be served as an afternoon or after dinner tea or coffee.
  • Chai Coffee is ready to serve.

  • 2 cardamom pods
  • 1 cinnamon stick, lighlty crushed
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon freshly ground black pepper (optional)
  • 2 whole cloves (optional)
  • 3 cups water
  • 1/2 cup milk
  • 2 tablespoons Black tea
  • 3 tablespoons granulated sugar (or to taste)

How to make Masala Chai:

  • Lightly crush Cardamon pods and Cinnamon in a mortar.
  • Put water in a pan. Add crushed Cardamon, Cinnamon, ground Ginger, black pepper and cloves to water. Bring the mixture to boil. Let it simmer for few minutes.
  • Remove the pan from fire and let the spices infuse their flavor for about 3-4 minutes.
  • Add the sugar and milk to the pan and bring to a boil.
  • Remove from heat and add tea leaves. Cover the pan, remove from hear and let it steep for 4-5 minutes.
  • Masala Chai is ready. Just strain it into a teapot or directly into tea cups.

Adrak Chai Recipe

  • ½” piece of Ginger (Adrak) (crushed)
  • 3 tsp. of any Pakistani Tea Leaves (Loose Tea)
  • ½ tsp. Aniseeds (Sounf)
  • 1 tbsp. Basil Leaves (Tulsi Ke Pattay)
  • Sugar (to taste)
  • ¾ cup Milk
  • 1 ½ cup Water

How to make Adrak Chai:

  • Put water in a small pot on medium heat. To the water add the ginger, basil leaves and aniseeds. And bring the water to a boil. Reduce heat and let it simmer on medium heat for about 5 minutes with the pot partially covered.
  • Add the sugar, tea and milk to the water. Bring to another boil and let simmer for another minute. Remove from heat.
  • Strain tea and serve hot.

  • 1 Cinnamon Stick (Dal Cheeni)
  • 6 Whole Green Cardamom Pods (Ilaichi)
  • 6 Whole Cloves (Loung)
  • 1 (1″ piece) of Ginger Root (Adrak) (peeled and sliced)
  • 4 Black Peppercorns (Saabut Kaali Mirch)
  • 3 cups of Water
  • 1 tbsp. Loose Organic Black Tea or 2 Tea Bags
  • 2 tbsp. Dark Brown Sugar
  • 1 cup Milk (whole or low fat) (or use non-dairy milk for a vegan version)

How to make Authentic Chai Tea:

  • Place the cinnamon stick, cardamom, cloves, ginger, peppercorns and water in a saucepan. Bring to a boil, then cover and reduce the heat to simmer for 5 minutes. Remove from heat and allow the mixture to steep for 10 minutes. Return to a boil. Remove from heat, add the tea bags and let steep for 3 to 5 minutes.
  • Strain the tea and return to the saucepan. Add brown sugar and milk while stirring over low heat for one minute. Serve immediately.

  • Black Tea 10 teaspoons (25grams)(I prefer using Formosan Tea)
  • Cardamon Seeds (5 grams)
  • Cinnamon Sticks (2-3 sticks) or
  • Cinnamon Ground 2 1/2 teaspoons (8 grams)
  • Ginger Powder (1 teaspoon)
  • 1 Clove Ground

How to Make Chai Tea:

  • Please note there are many ways to make Chai Tea and this is one which I prefer. Listed below are other tips and variations you can try.
  • Step 1: Using a coffee/spice grinder or mortar and pestle, grind up spices.
  • Step 2: Add tea to spice mixture. Fill tea pot or coffee plunger with boiling water and add spice mixture. Use 3/4 cup boiling water and 4 teaspoons of tea/spice mixture per serve. Let stand 3-4 minutes. Heat milk using stove top, microwave or even better use a coffee machine so you can produce frothy milk. This gives a cafe style chai tea latte. Add heated milk and sweeten to taste.

  • 2 1/4 cups water
  • 2 cardamom pod, whole, split
  • 1/4 inch fresh ginger
  • 1 1/2 cup milk
  • 4 teaspoons sugar
  • 2 teaspoon strong black tea

How to make Green Cardamom Chai Tea:

Add cardamom, ginger, water and bring to a boil. Simmer on low for 5 minutes. Add the milk and sugar to the pan and bring to a boil again. Add tea and bring to a boil again. Strain it into a warmed teapot or directly into teacups and serve with samosa or cilantro chutney sandwiches.

  • 2 1/2 cups cold water
  • 10 whole cloves or 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cardamom
  • 3 cinnamon sticks or 1 teaspoon ground cinnamon
  • 1 peppermint tea bag
  • 1 orange pekoe tea bag
  • 1 -2 teaspoon ground ginger or 1/2 inch chunk fresh ginger, depending on how spicy you want it
  • 2 peppercorns or 1 pinch black pepper
  • 1/4 cup honey
  • 2 -2 1/2 cups milk

How to make Traditional chai:

  • In large saucepan combine first nine ingredients.
  • Bring to a boil over high heat.
  • Reduce heat to low and simmer ten minutes.
  • Remove from heat and strain with fine sieve or through coffee filters.
  • Return to pot and add honey until melted.
  • Add milk and heat through, but do not boil.
  • Serve in clear mugs with a pinch of cinnamon on top.

  • You can also store the tea without the honey and milk in the fridge, then just reheat and add milk and honey to taste.
  • This is a nice tea to serve with gingerbread or shortbread cookies at gatherings.
