Brinjal Pickle Recipe

Brinjal Pickle Ingredients

Brinjal Pickle Recipe

  • 1 kg long brinjals washed and chopped in 1 inch pieces
  • 1 cup refined oil
  • 2 pods garlic, ground or chopped
  • 2 inch piece of ginger ground or chopped
  • 2 tablespoons chilli powder
  • 1 1/2 teaspoons cumin seeds
  • 1/2 teaspoon mustard powder
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon turmeric powder
  • 2 cups vinegar (white)
  • 1-1 1/2 cups sugar (as per taste)
  • 2 tablespoons salt

How to make Brinjal Pickle

  • Soak the chilli powder, cumin seeds, mustard powder, fenugreek seeds and turmeric powder in the vinegar for at least 1/2 an hour. Grind together.
  • 2 Heat the oil in the pan and fry the ground spices, ginger and garlic in it for 10-15 minutes.
  • 3 Add the salt and sugar.
  • 4 Bring to the boil and add the brinjals. Stir well and continue to cook on a very slow fire till the brinjals are cooked and the mixture has thickened.
  • 5 Cool, bottle and store in a dry place.
  • Brinjal pickle is ready to serve immediately.

    Onion – 1, slit lengthwise

  • Drumsticks – 2
  • Potatoes – 2
  • Brinjals – 4 to 5
  • Tamarind extract – very little
  • Fresh Coconut – 1 tblsp
  • Vangibhath Powder – 1 tsp
  • Salt as required
  • Oil for frying

How to make Brinjal and Drumstick Curry

  • Cut all the vegetables into 2 inch pieces lengthwise.
  • Heat oil, add mustard, curry leaves and then onion.
  • Fry till transparent, add other vegetables, fry for a minute, pour diluted tamarind extract (just enough to cover the pieces) and cook till vegetable becomes soft.
  • When moisture is absorbed completely, add salt, vangibhath powder, coconut and mix gently for one minute.
  • Remove from fire and serve hot with rice.
  • Brinjal and Drumstick Curry is ready to serve.

  • 1/2 kg long brinjals (preferably the plumper variety)
  • 1/2 cup oil
  • 1 inch piece of cinnamon
  • 4 onions, sliced finely
  • 1-2 green chillies, deseeded and finely sliced
  • 2 teaspoons fresh coriander, finely chopped
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1 1/2 tablespoons tamarind, soaked in 4-5 tablespoons water
  • 1 tablespoon jaggery, soaked with the tamarind
  • salt and pepper to taste

How to make Sweet and Sour Brinjal:

  • Wash the brinjals and slice thickly into rings.
  • Sprinkle salt all over them and leave to drain for about 1/2 an hour.
  • Heat the oil in the frying pan and fry the drained and dried brinjal slices in it till they’re golden brown.
  • They will be cooked through too by then/Remove from the oil and keep aside.
  • Check the quantity of oil and increase or decrease as needed.
  • You should keep just about 2-3 tablespoons in the pan.
  • Into this oil, drop the cinnamon.
  • Let it start to turn colour.
  • Add the onions and fry light brown.
  • Add the chillies, coriander, cumin, salt, pepper, and garam masala and stirring continuously, fry for a few seconds.
  • Push the tamarind and jaggery pulp through a strainer and add the extract to the pan (the seeds may be discarded).
  • Simmer the mixture for 2-3 minutes.
  • Add the brinjals to the pan, stir to coat evenly and simmer for another 2-3 minutes.

  • 1 kg brinjals big
  • 1 bottle vinegar
  • 2tbsp sugar
  • 2tsp red chilli powder
  • 2tsp turmeric powder
  • 1 cup oil
  • 1 tsp garlic ginger paste for bhagar:
  • 1 tsp hin seeds
  • 5-6 curry leaves
  • 1 tsp onion seeds,
  • 1 tsp mustard seeds
  • 5-6 fenugreek seeds
  • 7-8 green chillies.

How to make Baingan ka achar:

  • first cut Brinjal in to cubes along with stems.
  • now cut the green chilies but not till end just a little cut take ginger garlic paste and little vinegar with salt and apply on chillies keep them aside.
  • now take a wok heat the oil then put bhagar masala and fry till dark then add Brinjal in the wok and fry for few minutes.
  • then put red chilli powder and turmeric powder in it then add vinegar with little water in it.
  • now add sugar and salt to taste in the brinjals and put green chillies in it then simmer for 15 minutes on low flame.
  • now achar is ready you can put some tamarind water in it to preserve it for 15 days.

    Brinjals 4 nos medium size, cut into quarters

  • Garlic paste 1 tablespoon
  • Ginger paste 1 teaspoon
  • oil 3 tablespoon
  • Red chilly powder 1/2 teaspoon
  • Fennel powder 1 teaspoon
  • Salt use as required
  • Mono sodium glutamate 1 teaspoon
  • Soya sauce 2 teaspoon
  • Corn flour 2 tablespoon
  • Sugar 1 teaspoon
  • Spring onions 2 tablespoon chopped

How to make Brinjals In Garlic Sauce

1.Heat the oil in a wok.Add the garlic ginger paste and fry for 30 seconds over a medium flame stirring constantly.
2. Add the brinjals and fry till the brinjals starts to change color.
3. Add the red chilly powder, fennel powder and fry for a minute over a medium flame stirring constantly.
4. Reduce the flame and add the Soya sauce salt, jinomotto,sugar and fry for a minute.
5. Add a little water and simmer the mixture till the brinjals are cooked.
6. Dissolve the corn flour in a little water and mix with the Brinjals . Mix thoroughly.
7 When the gravy becomes thick remove from the flame.
8. Serve hot garnished with the spring onions.

Kashmiri Dahi Baingan Recipe

  • 68 medium sized Brinjal (long variety)
  • 2 cups Yogurt
  • Salt to taste
  • 2 tablespoon + to deep fry Oil
  • 1/4 teaspoon Asafoetida
  • 34 Green cardamom
  • 1 tablespoon Fennel powder (saunf)
  • 1/2 tablespoon Dry ginger (soonth)
  • 2 teaspoon Kashmiri red chili powder

How to make Kashmiri Dahi Baingan

  • Wash and cut brinjals into quarters length ways and keep in water till further use. Whisk yogurt and salt together.
  • sufficient oil in a kadai.Drain, pat dry and deep fry brinjals till light brown.
  • Remove onto an absorbent kitchen towel.
  • Heat two tablespoons oil in a pan,add asafoetida and green cardamoms.
  • Stir fry briefly and immediately add the whisked yogurt.
  • Stir in fennel, dry ginger and red chili powders.
  • Cook on medium heat for two to three minutes and add fried brinjals.
  • Reduce heat and cook covered for three to four minutes.
  • Adjust seasoning and serve hot.

    500 gm Brinjal julienned

  • 250 gms. Onions sliced
  • 3 green chillies finely choped
  • 1 tsp. mustard paste
  • 1/2 cup of sour cream
  • salt & pepper
  • Oil for deep frying

How to make Brinjal salad

  • Juice from one lime
  • Deep fry the egg plantstill crispy and golden brown, set aside.
  • Mix the rest of the ingredients together by hand.
  • Add the fried egplants lastly only at the time of serving.

  • 500 gm basmati rice
  • 300 gm brinjals
  • 1″ piece ginger
  • 2-3 pieces tej patta
  • 1 onion
  • 3-4 green chillies
  • 4-5 cloves garlic
  • 1/2 cup tomato pulp
  • 1 tbsp cardamom and cloves
  • 1/4 cup fresh grated coconut
  • 1/2 cup oil
  • 1/4 cup green coriander leaves
  • For powdered masala :
  • 1/2 tsp black pepper powder
  • 1 tsp roasted cumin seed powder
  • 2 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp cardamom and lavang powder
  • For wet masala :
  • 5 cloves of garlic, ginger, grated
  • coconut and cariander leaves (ground).

How to make Brinjal Rice:

  • Soak rice in water for 10 minutes.Wash the brinjals and cut into long pieces.
  • Apply salt and keep aside.Heat oil in a pan fry brinjal pieces.
  • Again heat oil in a heavy bottomed pan.
  • Add onions, chopped garlic, lavang, cardamom, green chillies and bay leaves.Stir.
  • Add ground masala paste, powdered masala and tomato pulp and salt to taste.
  • Now add rice and mix well. Add 5 cups of water to the rice and bring it to a boil.
  • Add a little lime juice and cover the pan.
  • After 8-10 minutes of cooking add fried brinjal pieces and cook for another 5-7 minutes. Serve hot.

  • 5-6 tablespoons of Besan (gram flour)
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon garlic paste
  • 2-3 green chili
  • Vegetable oil
  • Salt
  • Black Salt Powder

How to make Baigan ka Pakora or Fried Brinjal

  • Put 5-6 tablespoons of Besan (gram flour) in a bowl then, add 1/2 teaspoon turmeric powder, 1/4 teaspoon garlic paste, 2-3 green chili, salt to taste and mix well.
  • Make a thick batter with the above ingredients and add water if batter is becoming too thick.
  • Cut the baigan (Brinjal) into two halves in a circular shape, then with one half again cut it into semicircle shape into a total of 8 pieces and wash them in running water.
  • Take a non- stick frying pan put 1 cup vegetable oil and heat it for 4 mins. Dip the baigan (Brinjal) pieces into the batter (step 2) and fry in medium heat until it becomes golden brown.
  • Garnish with sprinkles of Black Salt Powder. Baigan (Brinjal) ka pakora is ready to serve hot with coriander chutney or tomato sauce for evening snacks.

Ingredients:

  • ½ kg long purple brinjals /egg plants
  • 3 tablespoons chilly powder
  • 6 pods garlic
  • 50 grams fresh ginger
  • 1 cup vinegar
  • 1 tablespoon mustard powder
  • 1 teaspoon tumeric powder
  • 1 cup refined oil
  • 1 cup of sugar
  • 2 tablespoons salt

How to make Indian Brinjal Pickle:

  • Wash and dry the brinjals well.
  • Cut the brinjals into medium size pieces.
  • Peel the ginger and garlic and chop into tiny bits.
  • Heat the oil in a pan.
  • Add the ginger and garlic and saute on low heat for a few minutes.
  • Add the chilly powder, mustard powder and tumeric powder and fry for a minute.
  • Now add the brinjals and salt and cook for 5 minutes on low heat.
  • Add the vinegar and sugar and mix well.
  • Cook till the sugar dissolves.
  • Cool and store in bottles
