    1 pound medium raw shrimp

  • 1 teaspoon garlic paste
  • 1 teaspoon ginger — fresh crushed
  • 4 tablespoons tamarind paste — Tamicon
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chile powder
  • 1/4 teaspoon salt — to taste
  • 2 tablespoons vegetable oil
  • 3 cloves garlic — chopped fine
  • 1/2 cup coconut milk
  • 2 medium jalapeno chiles — chopped
  • 1 tablespoon cilantro — finely chopped

How to make Bombay Shrimps

  • Peel the shrimp and place in a large bowl.
  • Add ginger, garlic, and tamarind pastes, turmeric powder, chile powder and salt to the shrimp.
  • Mix well and set aside for 10 minutes.
  • Heat the oil in a pan, add garlic cloves and stir until brown.
  • Add shrimp and stir for 2 minutes or until the shrimp begins to brown.
  • Add coconut milk, cilantro and green chiles.
  • Turn the heat off when the gravy begins to simmer.
  • Serve with steamed Basmati rice
  • Bombay Shrimps is ready to serve.

Bombay Chicken Curry Recipe

  • 2 kg chicken pieces
  • 2 tblsp olive oil (tel)
  • 2 tblsp white Vinegar (Sirka)
  • 1 1/3 cups (125gms) desiccated coconut (narial)
  • 4 cloves garlic (lasan), crushed
  • 1/2 tsp ground turmeric (haldi)
  • 1 tsp chilli powder
  • 1/2 tsp ground black pepper (kali mirch)
  • 1 tsp grated, fresh ginger (adrak)
  • 10 curry leaves (kari patta)
  • 1 tblsp sugar (cheeni)

How to make bombay chicken curry:

  • Place chicken pieces in a saucepan, cover with water and bring to boil. Reduce heat, cover, simmer for 30 minutes or until chicken is tender. Drain, reserving 1 cup (250ml) of liquid.
  • Heat oil in a saucepan, add vinegar, coconut, garlic, cumin, turmeric, chilli, pepper, ginger and curry leaves. Sauté for 2 minutes.
  • Add the chicken pieces, reserved stock and sugar. Bring to boil, reduce heat to low, cover, simmer for 15 minutes.

Bombay Toast Recipe

  • 3 slices of White Bread (Each slice cut into two triangle pieces)
  • 2 Eggs
  • 1 Onion (finely chopped)
  • 1 Green Chilli (Hari Mirch) (finely chopped)
  • Salt (to taste)
  • Black Pepper Powder (Pisi Kaali Mirch) (to taste)
  • 2 tbsp. Cooking Oil or Butter (Makhan)

How to make Bombay Toast:

  • Break the eggs into a bowl, add salt, pepper, chopped onions and chilli and beat well with a fork. Divide the egg batter into two parts and keep aside.
  • Heat 2 tbsp of butter in a frying pan, dip three bread slices into one part of the egg batter, coat well on both sides of the bread slices with the egg batter and fry on both sides until brown and crispy.
  • Repeat with the other three slices of bread and the remaining egg batter.

Bombay Chicken Biryani Recipe

Ingredients:

  • 1 kg chicken
  • 750 gm rice, soaked for 30 minutes
  • 1/2 cup Oil or ghee
  • 4 Onions, finely chopped
  • 3 potatoes, peeled and halved
  • 6 tomatoes , finely chopped
  • 1/2 cup Yogurt
  • 1 tbsp garlic paste
  • 1 tbsp chopped ginger
  • 6 green chillies
  • 2 tbsp salt
  • 1 pinch Yellow food colour, mixed in 4 tbsp milk
  • 1 packet Bombay biryani masala mix


Method:

  • Fry onions in oil or ghee until golden brown.
  • Add meat, ginger, garlic, tomatoes, yoghurt and bombay biryani mix and fry for 10-15 minutes.
  • Add the potatoes when meat is half tender.
  • Add 1 cup of water and cook on low heat until meat is tender (water is not needed for chicken).
  • When oil or ghee separates from gravy, add green chillies and cook for another 2 minutes then turn the heat off.
  • In another pan, boil rice in 6-8 cups of water with 2 tbsp of salt.
  • Drain water when rice is half done.
  • Set rice and meat curry in alternate layers in a big cooking pan. Sprinkle yellow food colour on rice.
  • Cover and cook on low heat for 10-15 minutes.
  • Garnish Bombay Biryani with sliced boiled eggs.
  • Delicious Bombay Biryani is ready to serve.
  • Serve with raita and salad.
