Blueberry Muffins Recipe

Blueberry Muffins Ingredients

    3 cups of all-purpose flour

  • 1 Tbsp baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 10 Tbsp unsalted butter (1 1/4 stick), softened
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cup plain yogurt
  • 1 teaspoon grated lemon peel
  • 1 1/2 cups blueberries
  • 1 Tbsp flour (if using defrosted frozen berries)

How to make Blueberry Muffins

  • Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375°F.
  • Whisk together the flour, baking powder, baking soda, and salt and set aside.
  • In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.
  • Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.
  • Use standard 12-muffin muffin tins. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the centers of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.
  • Walnut Chocolate Cookies is ready to serve.

    1 cup uncooked oatmeal

  • 1 cup orange juice
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 1 cup vegetable oil
  • 3 eggs, beaten
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tablespoon grated orange peel
  • TOPPING:
  • 1/2 cup finely chopped walnuts
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon

How to make Orange Blueberry Muffins

  • Combine the oatmeal and orange juice. Set aside. In a large mixing bowl, combine flour, baking powder, salt, soda and sugar. Make a well in the center of the dry ingredients and add oatmeal mixture, oil and eggs. Stir only until ingredients are moistened. Carefully fold in berries and orange peel. Spoon batter into greased muffin tins, filling about 3/4 full. Combine walnuts, sugar and cinnamon. Sprinkle over muffins and bake at 400 degrees F for 15 minutes or until muffins test done. Remove from tins and serve warm, if desired.

    1 cup graham cracker crumbs

  • 2 tablespoons white sugar
  • 1/4 cup melted butter
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 4 eggs
  • 2 cups frozen blueberries, dry pack
  • 1/3 cup blueberry jelly

How to make Blueberry Cheesecake

  • Combine crumbs, 2 tablespoons sugar and butter. Pat mixture into the bottom of a 9 inch springform pan.
  • Mash cream cheese until soft and creamy. Gradually beat in sour cream, 3/4 cup sugar, vanilla and flour. Beat in eggs one at a time.
  • Pour mixture into crumb-lined pan. Bake in a preheated 325 degree F (165 degrees C) oven for 1 hour or until firm to the touch.
  • Cool and then remove cake from pan by loosening edges with a knife. Place frozen blueberries on top of cake. Melt jelly and spoon over blueberries to glaze. Chill until ready to serve.

  • 1/2 c shortening
  • 1 tsp vanilla
  • 1 1/2 c sifted flour
  • 1 tsp baking powder

How to make Blueberry Cake

  • Preheat oven to 350.
  • Beat egg whites until stiff, add about 1/4 cup of sugar to keep them stiff.
  • Cream shortening, adding salt and vanilla.
  • Add remaining sugar to this gradually.
  • Add unbeaten egg yolks and beat until it is light and creamy.
  • Add the sifted dry ingredients alternately with milk.
  • Fold in beaten egg whites.
  • Fold in the blueberries (take a bit of the flour called for and gently shake the berries in it so they wont settle).
  • Pour into a greased 8 x 8 pan.
  • Sprinkle top of the batter with some granulated sugar.
  • Blueberry Cake is ready to serve.

Bake for 50 – 60 minutes.
