Ingredients:

  • 250 g green beans
  • 250 g cucumber
  • 250 g tomatoes
  • 2 tbsp vinegar
  • 1 medium onion, diced
  • Large pinch of paprika
  • Pinch of garlic
  • 4 tbsp oil
  • Few sprigs parsley for garnish
  • Salt, pepper

Method:

  • Trim the beans and cook them in boiling, salted water until tender. Drain and cool. Slice the cucumbers and tomatoes. Mix remaining ingredients together for dressing.
  • Layer cucumber and tomato slices in a glass serving dish or in 4 individual dishes and top with the beans. Pour dressing over salad and leave to marinate for 30 minutes.
  • Garnish with parsley.
