- 1 cup basmati rice,soaked for 30 minutes
- 2 cup coconut milk
- 1/4 tsp saffron powder
- 1 lime leaf
- 30 g desiccated coconut
- Place rice, coconut milk, saffron, lime leaf and coconut in a heavy based saucepan.
- Bring to the boil, then reduce heat.
- cover and simmer for 20 minutes or until rice has absorbed the coconut milk and is tender.
- Golden Rice is ready to serve.
