Quick And Easy Mexican Pizza Recipe

Ingredients

  • 6-8 ounces ground beef chuck
  • 2/3 cup chopped green pepper
  • 2/3 cup chopped onion
  • 1/2 teaspoon salt
  • 1 cup chunky mild salsa
  • 1/3 cup ketchup
  • 4, 8-inch flour tortillas
  • 1 cup finely shredded mild cheddar and Monterey Jack cheese

Method:

  • Place crumbled ground chuck in nonstick skillet over medium heat.
  • Add green pepper, onion, and salt.
  • Cook stirring constantly until ground chuck is done, about 5 minutes.
  • Add salsa and ketchup.
  • Stir and continue cooking about 3 minutes.
  • Lightly spray a baking sheet with cooking spray.
  • Place tortillas on baking sheet.
  • Spread beef mixture evenly on tortillas.
  • Flatten mixture with back of large spoon.
  • Sprinkle 1/4 cup of cheese on each pizza.
  • Heat in 350 degree oven about 5 minutes until cheese is melted.
