  • spiceD nuts
  • 1 Tbsp butter
  • 1 tsp sugar
  • 1/8 tsp ground red cayenne pepper
  • 1/2 C pecan or walnut halves
  • DRESSING
  • 1/2 C oil
  • 1 Tsp coarse ground mustard
  • 1 Tbsp cider vinegar
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 1/8 tsp ground red cayenne pepper or to taste
  • SALAD
  • 1/2 lb (Approx 2) boneless skinless chicken breasts
  • 1 Tbsp cajun seasoning
  • 1 tsp garlic
  • 5 C mixed salad greens (I like a spring mix or spinach and red leaf lettuce)
  • 1/2 red bell pepper cut into thin strips
  • 1/2 red onion cut into thin strips
  • 1 large tomato, cut into chunks

How to make Cajun chicken Salad:

  • Nuts: Melt butter in small skillet over medium heat. Stir in sugar and cayenne pepper; mix well. Stir in nuts to coat. Cook and stir 4-5 minutes or until nuts are lightly toasted. Remove from heat and cool.
  • Dressing: In small container with cover, mix all dressing ingredients shake very well. Refrigerate until ready to use.
  • Preheat grill. Sprinkle chicken with cajun seasoning. Grill chicken on medium heat until done, about 10-12 minutes. When done, cut into strips.
  • Toss warm chicken, onion, red pepper and tomato with salad greens. Sprinkle with spiced nuts. Serve with dressing.
