Ingredients:

  • 12 chopped dried apricots
  • 2/3 cup apple juice
  • 3 Tbs natural yoghurt
  • 2/3 cup rolled oats
  • 1 tsp sugar
  • 2/3 cup water

Method:

  • In a microwave safe dish place the rolled oats, apple juice and water.
  • Then cover the bowl and microwave for 2 1/2 minutes on high, stir and microwave for another 1 1/2 minutes.
  • Serve the porridge into 2 serving bowls and then put yoghurt, sugar and apricots on top.
  • If you like more milk you can add extra to the Apple and Apricot Porridge.
  • Enjoy your freshly made Apple and Apricot Porridge!

French Toast with Apple Cinnamon Sauce Recipe

Ingredients:

  • 4 eggs
  • 1 cup milk
  • 3 Tbs sugar
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 3 Tbs butter melted
  • 8 slices french bread cut thick

Sauce:

  • 2 tsp butter
  • 3/4 cup water
  • 1/2 tsp cinnamon
  • 1/2 cup brown sugar
  • 3 apples peeled, cored, sliced thinly

Method:

  • First thing preheat oven to 375 degrees.
  • To prepare toast whisk eggs with milk, sugar, vanilla and cinnamon then dip the bread into mixture coating both sides allowing the bread to soak up the mixture.
  • Place bread on baking sheets brushed with butter to prevent sticking then bake the bread for 12 minutes then turn over and bake for another 12 minutes or until golden and puffy.
  • To Prepare the sauce add butter and the sugar to a saucepan and cook until melted.
  • Add water, cinnamon and apples.
  • Cook on low heat for 8 minutes or until tender.
  • To serve the French Toast with Apple Cinnamon Sauce arrange toast on plate and top with sauce.
  • It is good with a dab of cream on top to, if desired.

Egg And Potato Pie recipe

Ingredients:

    Eggs(hard boiled) 6

  • Potatoes(boiled, peeled)5 medium size
  • Butter 1 tbsp
  • Ham(finely chopped) 2 tbsp
  • Cheese(grated) 1 cup
  • Salt & pepper to taste
  • Sour cream 1 1/4 cups
  • Tomatoes(sliced) 2
  • Chives(chopped) 1 tbsp

Directions:

  • Line a casserole dish with butter, arrange a layer of potatoes at the bottom followed by a layer of sliced eggs.
  • Then sprinkle the ham, cheese and the seasoning.
  • Pour the sour cream on top, garnish with tomato slices and chives.
    Bake the dish in an oven for about 15-20 minutes at 180 degree C.
    Serve with crusty bread and a crispy salad.

Preparation Time: 15 mins
Cooking Time: 30 mins
Serves: 4

Stuffed Omelet Recipe

Ingredients:
For Filling:

  • 2 tbsp oil
  • 2 garlic cloves, finely chopped
  • 1 small onion, finely chopped
  • 1/4 kg chicken mince
  • 2 tbsp Soya sauce
  • 1 tsp sugar
  • 1 tsp black pepper
  • 2 tomatoes, peeled and chopped
  • 1 tbsp chopped coriander leaves

For the omelette:

  • 6 eggs
  • 1tbsp Soya sauce
  • 2 tbsp oil
  • Coriander leaves to garnish
  • Green chillies cut in halves, to garnish

Directions:

  • Heat oil in a pan. Add garlic and onion and fry for four minutes until soft.
  • Stir in the chicken mince and fry for about 10 minutes, until lightly brown.
  • Add Soya sauce, sugar, pepper and tomatoes.
  • Stir to combine and simmer until the sauce slightly thickens.
  • Lastly add the chopped coriander leaves.

To make the stuffed omelet:

  • Whisk together the eggs and Soya sauce.
  • Heat oil in a pan. Add half of the beaten eggs and tilt the pan to spread it into a thin even sheet.
  • When set, put half the filling over the centre.
  • Fold in opposite sides; first the top and bottom, then the right and left sides to make a square parcel.
  • Slide out on to a warm serving dish, with the folded side down.
  • Repeat with the rest of the oil, eggs and filling.
  • Serve garnished with coriander leaves and green chillies.

Herb Omelette with Stir Fried Vegetables Noodles Recipe

Ingredients:

  • Egg 3
  • Oregano 1/2 tbsp
  • Basil 1/2 tsp
  • Thyme pinch
  • Coriander 1 tbsp
  • Salt to taste
  • Pepper pinch
  • Green chilli sliced 2 pcs
  • Garlic chopped 1 tbsp
  • Carrot sliced 3 tbsp
  • Cucumber 1/2 pc
  • Mushroom sliced 2 tbsp
  • Soya sauce 2 tbsp
  • Capsicum juice cut 1 pc
  • Oil 2 tbsp
  • Aginomoto 1/2 tbsp
  • Noodles 150 gms

Directions:

  • Beat eggs in a bowl. Season with salt and pepper.
  • Add oregano, basil, thyme and coriander and mix.
  • Add a little oil in a frying pan, pour egg mixture and cook omelette and remove.
  • In the same pan add some more oil, and carrot, cucumber, mushroom, Soya sauce and capsicum and fry for 1 minute.
  • Now add green chillies, aginomoto, salt, pepper, ginger, garlic and fry for 1 minute, add noodles and mix.
  • Put them in a plate.
  • Roll the omelette, cut and arrange on noodles.
