Hyderabadi Khichda Recipe

  • 1 tbsp adrak-lasan paste
  • 2 cups wheat, soaked overnight, drained, pounded and dehusked
  • 2 tbsp rice
  • 2 tbsp chana dal
  • 2 tbsp masoor dal
  • 2 tbsp masoor dal
  • 2 tbsp tuvar dal
  • 2 tbsp moong dal
  • 2 tsp garam masala
  • 2 tsp chilli powder
  • A handful of kothmir, chopped
  • A handful of pudina, chopped
  • 5 tbsp ghee
  • 2 onions, sliced fine and fried crisp
  • Salt to taste

How to make Hyderabadi Khichda

  • Wash dal and rice and soak before draining. Then pressure cook till tender. Set aside.
  • Apply the adrak-lasan paste to the mutton, add 1½ cups water and pressure cook till tender and remove.
  • Add 2 teaspoons oil to the wheat along with 2 cups water. Pressure cook till tender.
  • Mix mutton, wheat and dal and blend well, adding salt to taste, chilli powder, garam masala, fried onion, chopped pudina and kothmir.
  • Simmer, then pour hot ghee.
  • Serve with lemon slices.
